Modernist Cuisine inspired Pumpkin Pie

I saw a recent post on the MC blog of a pumpkin pie recipe they created using iota and kappa carrageenan.

I decided to recreate the pumpkin pie component using a different blend of carrageenan. Much more convenient for me since I have it laying around. Here is a link to the recipe in my blog.

Working for a food ingredient company has given me access to modernist cooking equipment which I use for developing recipes.
