Hot Chicken

So I came upon a description of this recently - supposedly an extremely spicy regional variety of fried chicken,native to the Nashville area.

I like my chicken fried and I like my chicken spicy, so naturally this piqued my attention. What can you tell me about it? Does anyone have a recipe/technique?

This is my skillet. There are many like it, but this one is mine. My skillet is my best friend. It is my life. I must master it, as I must master my life. Without me my skillet is useless. Without my skillet, I am useless. I must season my skillet well. I will. Before God I swear this creed. My skillet and myself are the makers of my meal. We are the masters of our kitchen. So be it, until there are no ingredients, but dinner. Amen.

This is very much a Nashville phenomenon, but only at 1 restaurant - Prince's Hot Chicken. It's not going to be something easily replicated at home unless you eat it multiple times, and even then, if you actually eat the "hot" level, it's going to burn your palate out so quickly that it's going to be hard to figure out exactly what's going on there.

The Southern Foodways Alliance documentary filmmaker, Joe York, did a film about Prince's a couple of years ago. You'll be able to see just what keeps people talking about it.
