Wood Eggplant knife?

Recommended Posts

My mother just returned from a visit to her sister in Israel. According to my aunt, eggplant turns black when cut with a steel knife ( I have not seen this, but I will roll with it). In Israel, they sell wood knives that look like cleavers to slice eggplants. This is apparently a fairly popular item. Has anyone heard of this before? Is there any truth to it?

Thanks!

Dan

Carbon steel knives will discolor eggplant. I always used a stainless steel but more recently a ceramic blade to avoid this.

Carbon steel will also cause lettuce to discolor along the cut edges.

The world belongs, however, to those who can look at the glass and say: What's up with this glass? Excuse me? Excuse me? This is my glass? I don't think so. My glass was full! And it was a bigger glass!" Terry Pratchett
