Molecular Gastronomy in Spain

Hi Guys! I will arrive in Barcelona and Madrid some day in January/2010!

I don´t know how you guys in Spain call "Molecular Gastronomy"...in Brazil we speak like that. Whatever, i really want to try some "El Bulli" food...Since El Bulli will be closed in the winter ( and a reservation there is almost impossible ), where can we eat the same style off food they serve in El Bulli ? I was looking for Terraza del Casino... There is other good places to go ? What is you recommendation ?

Hey Ronaldo,

The name "Molecular Gastronomy" in Spain is not used as it has become a very bad term. We tend to use the term "Progressive cuisine" as it better describes what we do.

I am actually the Head Chef of the Creative Lab for La Terraza del Casino.

We work with Ferran and as such we have a part of our menu which are his plates and we go every season to El Bulli so he can show us how they are done to the exact standards of El Bulli.

To make a reservation please mail the address below, we are usually booked solid for dinner and especially since we gained our second Michelin Star. Please mention that you know me (Adam Melonas) and they will try and fit you in.

Do you now if we need to dress tie to go dinner in Terrazas ? The price of Degusation Menu is Still around 80 euros ? I will also go with my brother and sister and they aged 17, is this a problem ? I will just see the exact day i will be arriving in Madrid to send a e-mail ! Really Thanks for your Help and assistance !!

Carlos, it is very close in style. La Alqueria serves El Bulli's greatest hits, with menu's put together from selections of dishes from previous years El Bulli menus. It is the El Bulli hotel, owned by Ferran Adria, and usually staffed by chefs who have worked in the kitchens at El Bulli. It is rumoured that Ferran is often found in the kitchens when El Bulli itself is closed.

However, as the OP said it is a long way in distance from Barcelona or Madrid, although Seville is great in its own right. It is also closed from November '09 until March '10.

Carlos unfortunly i will stay in Spain between 05/01--10/01 so La Alqueria will be closed! Very Sad. I have already send to Terrazas an e-mail... Lets Wait...

Do you guys know other restaurants with "Progressive cuisine" in Madrid/Barcelona ?? I prefer the ones not so expensive! Because we are 4 people... 30-70 euros per person is a good range...

Its sad, but unfortunately i will cant go to Terrazas. The menu costs 130 euros per person, since we are four it will be very expensive.

So, i was thinking in Alkimia ? What do you guys think ?

If Alkimia is within your price range, why not just dine there? It is probably as 'creative' but still excellent as there is in Barcelona. Comerc24 is about the same price range, lively and fun. My current favorite is Sauc but a little more conservative, similiar to Abac. The chef was the chef de cuisine there before opening this restaurant a few years ago. Cinc Sentits is consistently good though the experience is very low key. Other good and a little less expensive: Coure, L'Olive, Hisop. These are all good restaurants and will give one a good idea about modern Catalan cooking, but don't expect the "El Bulli" experience.

i would second alkimia too, also you should look at diverxo in madrid and perhaps dassa bassa i had nice meal there but not sure what the level of cooking is like at the moment you could also look at www.restaurant-routa.com for modern dining in barcelona, another option is check to see if moo are doing any lunch promotions as they offer really good value at times for lunch service

Definitely, although I had the better meal at Sauc, Alkimia is probably more flamboyant and pushes the boundaries more. One to try, though there may be severe ups and downs...

Where did you end up Ronaldoebt?

A bit late maybe but people always seem to be interested in this topic, I had a good meal at Espai Sucre in November, it's primarily a dessert restaurant but also serves a 2-3 savory courses first if you want them. Some great flavour combinations in the style you were after.
