Honey Kasutera [castella] (Japanese Honey Sponge)

I love a slice of honey sponge with Tea of an afternoon - this one is way better than bought ones and is Natsukashii (memory-evoking) for anyone who's tried it while in Japan.

Oh, and you'd better have a sweet tooth. :o)

  • 5 Eggs
  • 3/4 c Raw Sugar
  • 1/4 c Honey
  • 1/2 c Plain Flour (Sifted)

Place together the eggs, sugar & honey and beat it using an electric beater until it is a thick white foam.

Add the sifted flour and beat well into the mixture. Pour into a loaf tin.

Bake in a preheated 160C oven for 15 minutes.

Stir the mixture.

Bake for another 30 minutes.

Let cool in pan, turn out and slice.
