Chocolate Mayonnaise Cake

This is the hand written recipe for Mayonnaise cake as our family makes it.

I have seen recipes that call for 3 tablespoons cocoa but this tastes chocolatie enough for me.

1 cup dates or raisins

1 cup boiling water

1 cup mayonnaise

1 cup sugar

2 cups all-purpose flour

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1 Tbs. cocoa

1 tsp. vanilla

Preheat oven to 350.

Grease a 9x13x2” or a bundt pan.

Pour boiling water over raisins or dates.

Blend together mayonnaise and sugar.

In a bowl, mix dry ingredients

Mix raisin mixture, mayonnaise mixture and dry ingredients together with vanilla.

Bake for about 40 minutes.

Test with cake tester.
