I'm looking for something to start taking for lunch. Requirements:

- easy and quick to make

- can be eaten cold

- lots of calories or nutritious

Egg salad isn't bad, but I can't eat that every day. Suggestions?

Hummus is a main stay in our family. Also salmon salad. The drawbacks with both is that you can only pack them into a tortilla at the last minute or you get the major sop factor.

Although, I pack salmon salad into a sour cream type container and then top it up with shredded lettuce. Love it.

Does it have to be vegitarian? You can do plenty with cold cuts and cheese with lettuce, tomato, maybe some onions on the side with a little "go cup" of dressing. Stack or roll meats and cheeses, slice or cube, at lunch time mix with your salad and dress. Instant chef's salad. Add bread as desired.

A couple of my mainstays:

sliced apple and peanut butter

cottage cheese and pineapple

Do you have refrigeration available, or must you keep it cold in a lunch box?

Do you have a microwave or stove available?

There is the Italian tuna and white bean salad with capers, red onions, fresh herbs, etc. Traditionally olive oil would be the binder, but if you want lots of calories, I've also had them with mayo. You can serve inside a tomato or just a bed of lettuce. It keeps well and is great for lunch.
