Late Night Chef's Dive/Eatery in NYC

We are a couple of chefs from St. Louis (originally from Montreal and Florida) staying in Soho for the weekend. We haven't been back in NY in a few years and wanted a place to go to have a good drink and maybe fantastic food with local industry peers. We'd love some suggestions... Thanks!

A lot of chef do Japanese/faux Japanese late night, cuz those are open late, and koreatown cuz it's 24hour

The question is, are you trying to go after last order at your peer's restaurants, or you want to see their work while they're on?
