Its blackberry season!

In our area the blackberries are at their peak. This year is a good one so the crop is heavy & we have picked at lot.

Initially we freeze them whole after cleaning; that is those that don't end up with ice cream or in a blackberry & apple pie.

Later we'll make jam & jelly as well as blackberry puree.

We're looking for other ideas on how to use/preserve them.

What do you do?

We've got tons here, too -- wild and seedy with great flavour but not much sweetness. My suggestion:

500 ml berries

250 ml sugar

750 ml vodka

Put everything into a big glass jug with a lid, stir once a week and drink at Christmas.

Here's a good one: sweet and sour blackberry sauce. Blackberries, sugar, pinch of salt and balsamic vinegar. Cook down to desired consistency. Strain--or not. More to the sour side, it would be great with duck, pork or game. More to the sweet side, pour over ice cream or pancakes.

LOL Peter -- I clicked on this topic specifically to post the same recipe. I make it with red raspberries and have friends vying for it as their Christmas gifts. One woman brought her empty bottle back after New Year's asking for a refil :)
