Etymology of "hotel pan"

Anyone know how these pans came to be known as hotel pan? Every search on the information super highway comes up with a distributor trying to sell them to me.

Actually, do a search on egullet. we talked about that I think almost two years ago and somehow formed our own story of events I think. I would pull it up for you but I can't seem to locate anything that I don't have the exact title to. Maybe someone else will find it.
