Dishes that are better the next day?

I made a butternut squash dish a couple of days ago and ate some warm just after cooking. It was alright, but nothing special. One of the few times I've regretted not using butter cuz a pat probably would have helped. The next day I took some out of the fridge and heated it up, and it was delicious.

What dishes do you think improve by sitting in the fridge a day?

I make a beet dish with garlic and vinegar that improves the longer you leave it, but thats basically a pickling recipe.

Hmmm. Sounds like I've dusted off my Fall (greenmarket produce) recipes. :)

Homemade roasted salsa.

Pesto.

Pretty much any "one pot wonder" - soups, cassoulets, chili, tomato sauce, stir fries, etc.
