Beef Marrowbone for Veal Marrowbone...

Can any one tell me whether beef marrowbone is an acceptable substitute for veal marrowbone, when making, say, Fergus' marrowbone & parsley salad? No butchers near me seem to have, or be willing to get any veal marrowbone.

Where are you? It would be expensive, but you could get some osso bucco.

As long as the bones were not aged too long it should be very good. The great thing with veal is that it is rarely aged for very long. If you get bones from a well aged carcass, they will taste off... unlike meat, bone marrow degrade quite fast.
