And if the chickens are fed with stuff grown using copper sulfate (there may be other "organic" chemicals), they can still be classified as "organic"?

I guess there is one way to be sure, grow your own.

Part of the whole problem is ,of course ,defining organic. Is it limited to things found in nature? If so then gentamicin and petroleum is organic.  I'm not mocking,  just saying it isn't easy.
