From just perusing this thread, one who didn't know better would think that all everyone ate was roasted cauliflower with Jayme's Salsa, and both are the bomb.

It is good to be a BBQ Judge.  And now it is even gooder to be a Steak Cookoff Association Judge.  Life just got even better.  Woo Hoo!!!

You know, so often you have a recipe that you enjoy, and you post it, and you wonder whether or not anyone else made it, or liked it....

To the people that have mentioned my recipes here - the caramel corn, the carnitas, the salsa - I just want to say, thanks. I really appreciate your letting me know that you've enjoyed them.

Not sure quite what to say, but I'm bustin' my buttons right now, I'll tell you that.

I don't understand why rappers have to hunch over while they stomp around the stage hollering.  It hurts my back to watch them. On the other hand, I've been thinking that perhaps I should start a rap group here at the Old Folks' Home.  Most of us already walk like that.

Haven't tried broccoli yet, but my favorite roasted vegetable is brussel sprouts. I didn't like brussel sprouts much til I tried them roasted. I generally halve or quarter them, toss with olive oil, salt and pepper and roast at 450. The crispy dark bits are the best!

Yes, lets hear it for the crispy dark bits! That's my favorite part too.

My list is:

Roasted cauliflower

Duck confit - from the wonderful pictorial. The hardest part was finding the large quantity of duck fat for a decent price.

Fried eggs placed on top of burgers, pasta, and anything else suitable! Always, a good quick meal.

Negronis!

All of the delicious above, plus Jaymes's Caramel Popcorn. Easy, cheap, addictive, adored by everyone from toddlers to geezers.

And how did I miss this until today. Made a batch tonight - it is the best!

Maybe I should let Caro post in this one, since she's the wok-pro, but we're all goofy over hzrt8w's mapo tofu. Especially for breakfast---waking to the scent of ginger and garlic hitting that hot oil, and then the meat browning and the mixing in of all the sweet and hot and rich---I make the pot of Calrose while the coffee perks and the tofu soaks up those glorious flavors.

And it's super-delicious NEXT breakfast, with any kind of eggs---over them or beside them, or simmery in a covered pot with a few nice Jumbos broken in to firm the whites and leave the yolks richly smooth.

It's not a recipe, per se, but I have to say egullet has re-ignited my love of eggs - especially over easy, soft cooked and otherwise runny and food-porn-photo-inducing! I kinda burnt myself out on eggs in college, but in the past few years have been dreaming of ways to add them to dishes like stir fries, curries, burgers and more! :wub:

I jotted down the names of all the recipes that sounded good to me, and found most of them.

I can't find two I really want, though --

Can someone point me in the right direction?

I take it when folks say they like Smithy's eggplant, they use it as a side dish and not necessarily in the lamb dish. Point being bechamel plus soft eggplant equals fabulous.

Katie, if there's something in particular you want, I might have it already and can at the least email it.

I've never made the lamb dish (but darn, it's looking good), but I use the creamed eggplant as a base for other thick stews or for meat and a sauce, where one might use a soft polenta or mashed potatoes.

I admit to monkeying with it and using a more strongly flavored cheese (read: whatever shredded cheese I have lying around!) and serving it straight up as a side dish.

Had to bump this old thread when I started thinking about paulraphael's Brown Butter Muscavado Chocolate Chip Cookies today. Recipe here.

And want to nominate Andi for her 'famous' or 'infamous' Candied Ginger.

In her cookbook that's linked under her signature line. It's majorly good! I tweaked it with more avacados, all the good ones we get here in FL are the tiny little Haas. Everything else is sorta like a water balloon!

Many, many wonderful dishes have comeout of my kitchen courtesy of this forum. But if I had to pick one, it would be Castaneda Posole. Which I am about to be jonesing for, because I haven't made it this weekend and I have some pork shoulder cutlets in the freezer crying for it.
