I once had a dream that I made and ate a giant scotch egg, but I hadn't considered it could be an ostrich egg. I figured it was a giant chicken from HG Wells' "Food of the Gods".

I've always wanted to make a basket of spicy wings but use big turkey wings instead of chicken, now I'm thinking Ostrich!

Is it just me or did that yolk seem a bit underdone to anyone else?

And yes, it looks revolting - would be revolting even if the yolk were cooked through because one of the things that makes devilled eggs appealing to me is the proportion of yolk to white - that perfect contrast in taste and textures between between the yolk and white in each bite. Something well nigh impossible to achieve with an ostrich egg unless you have a mouth the size of Shrek.

The deviled ostrich egg is an interesting idea, but also definately revolting.

I'm pretty sure that yolk looks translucent because it's underdone. Although I'm not sure how to properly time a hard-boiled ostrich egg, myself. :biggrin:
