Help Identify Corsican Pickled Salmon Dish

I'm hoping someone can help me solve a delicious mystery . . .

I just got back from a trip to Paris and Corsica. I was served a fabulous salad in Corsica that consisted of a simple mixture of endive, carrots, cauliflower, red onions, frisee, some lettuce greens.

Next to the salad was a pickling jar propped open with a cinnamon stick. Inside the jar were three pieces of salmon pickled in olive oil, star anise, capers, thyme, rosemary, carrots, some other unidentified things.

I hope I'm properly attaching the photograph.

Does anyone know what this is? Where I can get a recipe for it? Maybe it was the setting, or the wine, but it was truly one of the great dining experiences in my life and something I'd like to serve to guests.

It looks like a version of escabeche (scabecciu in Corsican dilect), a common way of preserving fish in a vinegar base around the Med. (and the rest of the word for that matter). As far as I know there are no native populations of salmon in Corsica and the star anise doesn't sound very typical either.

But a basic recipe* might be:

1 kilo of fish

salt

200 ml olive oil

1 lemon

seasoning (bay leaves, cinnamon stick, onion, star anise etc)

150 ml white wine vinegar

50 ml water

Season fish with salt, fry fish in half the olive oil until just cooked through, pat of oil with kitchen towel, and put fish into a sterile jar or baking dish, layer with lemon slices. Discard oil used to fry fish, add the rest of the oil to the pan with the seasoning and cook for 1-2 minutes until seasonings release their scent. Add vinegar and water, boil for 5 minutes then pour over the fish, allow to cool, then store fish in a cool place or refridgerator for 2-3 days.

No problem, thanks for the help.

I was excited by the concept that I could "put up" the fish ahead of needing to serve it. And I really liked digging around in that pickling jar, trying to find the fish.

When I look at the picture and consider recreating it, I'm thinking there needs to be some sort of cheesy bread in the picture, like a blue cheese popover kind of thing. Herb biscuit.

I like to bake nice things. And then I eat them. Then I can bake some more.

      I LOVE pickled ginger. In fact, in some instances, moreso than sushi or sashimi itself. When I was first introduced to sushi, it was my least favorite part of a sushi meal. Now it's the opposite.
      Besides sushi/sashimi, what other uses for pickled ginger are there? And how do you make your own? What goes in the pickling solution? Fresh pickled ginger (not premade) is undyed and a pale beige in color, whereas the premade version is a slight tawny pink.
      Any suggestions?

      I have been making pancetta for the first time. I have experience with the curing process doing things like bacon and cold smoked salmon in the past but this is the first time I have ever hanged anything.
       
      After a week of curing it has had 11 days  hanging so far (I was planning on taking it to 28 days hanging) Although I foolishly forgot to weigh it. 
      It smells really good like some awesome salami and the outer rim of the pancetta looks lovely and rich and dark.
      It was a recipe by Kuhlman in one of their charcuterie books.
      But when I inspected it today it had the mould growing on it as in the pics below. I have since scrubbed the mould off with white wine vinegar and returned it to the cellar. Is it wise to continue?

      What sorts of mustards do you like? The type of mustard I like is pungent without a hint of sweetness (fie upon honey mustards), but not too vinegary. Inglehoffer's Stone Ground tends to be rather good, but it's got a little too much vinegar (overpowers the taste of the mustard). What sorts of mustards do you like? Any brands?       Sorta Secret Aardvark Sauce (Habenero Hot Sauce)
      I thought I'd submit my recipe which is a clone of a locally available sauce here in Portland OR called Secret Aardvark Sauce.
      Sorta Secret Aardvark Sauce
      1 – 14.5 oz can of diced tomatoes or roasted tomatoes chopped - include the juice
      1 – 14.5 oz of rice wine vinegar. Use the now empty tomato can to measure
      1-1/2 cups of peeled and grated carrots (packed into the measuring cup)
      1 cup of finely diced white onion
      1/4 cup of yellow mustard
      1/3 cup of sugar
      2 teaspoons of Morton’s Kosher Salt
      1 teaspoon of black pepper
      13 small Habaneros – seeded and membranes removed. (This was 2 oz. of Habaneros before cutting off the tops and removing the seeds and membranes)
      2 teaspoons curry powder
      1 cup of water when cooking
      5 or 6 cloves of garlic - roasted if you've got it
      Put it all in the crockpot on high until everything is tender. About 3 hours  Note: I used the crockpot so I don't have to worry about scorching it while it cooks. 
      Whirl in food processor – Don’t puree until smooth – make it lightly/finely chunky.
      Makes 3 pints - To can process pint jars in a water bath canner for 15 minutes
      I've thought about making this with peaches or mangoes too, but haven't tried it yet.
