  1. Well, I took down my pancetta, but when I cut into it I noticed that there was some mold around the pepper on the inside. The meat itself looked fine, but I decided to throw it away for safety's sake. Next time I'll just skip the rolling and hang it up as a slab.
  2. Even the supermarket "butcher" at my local Giant Eagle said he could order fatback for me. I would keep looking.
  3. I had the same problem with the pancetta not firming up. I left it in the cure for an extra day and a half, then I decided to hang it anyway. It's in the hanging phase now.
  4. Thanks for the ideas, guys! I made some last night basically following Jackal's recipe. I churned it today and I'll see how it tastes tonight. I'm definately going to try the burnt sugar recipe above sometime! Brian

  6. Did you go ahead and use the Indian chickpea flour for your panelle? In his new book, Mario Batali specifically says not to use the Indian flour, only flour from Italy. I don't know what the difference would be.
  7. It's actually very easy to make. You can treat it like bacon. Although if you don’t cure it I don’t think it’s true guanciale anymore. Does anyone know if the pork has to be from a certain area? ← Can you hang it in the fridge or does it have to be in a less humid environment?
  8. In St. Mario Batali's new book he has a recipe for making guanciale at home. It says that you can hang the cured hog jowls in the fridge for 3 weeks to dry it out. I have always thought it would be too humid in there to work properly. Does anyone here have experience with this? BTW, Mario's new book is beautiful and highly recommended.
  9. The recipes I've seen for chewy cookies have always used melted butter. Supposedly, the water in the butter developes the gluten in the flour, which makes the cookies chewier. Something to try anyways...
