  1. Steak and eggs sauteed in butter & Montreal Steak Seasoning with lots of Dave's Insanity Kicking Cayenne Sauce & cheddar on buttered rye toast

    Quickly thrown together gazpacho

While watching Hell's Kitchen and then the new Tony Bourdain show (love it - "I need some hot chocolate and a couple of fat chicks")

Amazing summer dinners and great pictures on this thread!

  2. Friday night: beer

Saturday night: A humongo bone-in ribeye my boss gave me for doing some personal stuff for his family. $25.99 a pound (aged)!! Seared on stove and finished off in oven. French fries. Tomato salad with blue cheese crumbles. Very good steak; the other one he gave me is in the freezer and will be grilled outside.

The Basilman freaked out at the price of that meat.

Sunday night: Lidia's Chicken Valdostana with homegrown tomato sauce and Trader Joe's tagliatelle imported from Italy (very good). The Basilman wanted to "help" so he cut the chicken into strips instead of the thirds I had asked him to. Which made it hard on me but it still turned out delicious.

  3. Ham, zucchini, Vidalia, serrano, mozzarella & ricotta frittata. Nibbled at while processing approximately a bushel & a half of tomatoes in an old but very cool juicer held together with duct tape.

One Bloody Mary apiece made with tomato water & Old Bay.

  4. Paula Deen's tomato pie, similar to my Aunt Nancy's except Paula uses scallions instead of Vidalias, and of course mixes the cheddar & mozzarella with ONE CUP of MAYONNAISE.

    It was awesome.

  5. Chicken-cheese burritos with tomatillo sauce. I had never cooked tomatillos before. I didn't know that they are kind of slimy, like okra. But the sauce turned out great.

Champagne. To celebrate meeting the Basilman 12 years ago at the farmer's market.

  6. I love Ina's recipes. I love her house. I envy her lifestyle. Unfortunately for your wife, I read on her Web site that she has her shirts custom made in NYC.

Rachael: What can I say. She's super hyper, overly made up, screaming hair highlights, hopping around the kitchen, and making burgers and ice cream desserts constantly. The older shows are so much gentler.

Sandra Lee: What a whoot! I watch her just to laugh hysterically. The other day she made "pulled pork" "tapas" - she ripped the meat off a bunch of store-bought baby back ribs, threw the chunks in BBQ sauce with TACO SEASONING added, and served this wreck on "oven chips" frozen french fries that she fried up in a mess of oil, offering the sage advice to not cook with hot oil if your hands are wet. And don't get me started on the "tablescapes" and color coordinated Kitchen Aids. Just too amazing for words.

Mario was on Emeril the other night pimping his new cookbook. They had a mini Iron Chef thing going on. Mario cooked wheels around Emeril. I wish there were new Molto Marios.

  7. Of all the seriously annoying things RR does, the one that grates on my last nerve even more than the EVOO, garbage bowl, healthful, piling up ingredients (although I read elsewhere her producers make her do it) and excessive hand gestures is that when she roasts veggies she puts them in a half sheet pan. That's not roasting; that's steaming. Spread em out! It's the Food Network for crying out loud. Get a bigger pan. I'm sure they've got one around there somewhere.

  8. Our first BLT's with Early Girls from The Garden from Hell. Basilman had four (4!), I had one. Safeway English muffin toasting bread, broiled lightly on one side, then the toasted side spread with mayo (he used Marie's Blue Cheese dressing) and filled with lots of Hormel Black Label bacon, tomatoes, lettuce, S&P. Putting the toasted side in avoids the dreaded BLT toast scraping of the top of your mouth.

  9. Lynne Rosetto-Kasper's turkey burgers with provolone; Trader Joe's cheese fries, which were just eh; our first of the season homemade pickles (Epicurious' Spicy Dills) and pickled green tomatoes

  10. Her beef stroganoff - strips of round steak braised slowly in onions & butter and beef stock - no fancy filet or sirloin for us (6 kids)...tomato paste, mushrooms, sour cream, heavy cream. On buttered poppyseed noodles.

    Pot roast French dips.

Slices of salami layered with cream cheese and cut into triangles.

Beef fondue with 3 kinds of dipping sauces.

Cream cheese, olive & walnut sandwiches.

  11. Well, The Basilman's garden is starting to overflow. He planted at least 30 chile pepper plants, and an unknown number of tomato plants. He likes to do things in a big way. Anyway, the serranos, habaneros, banana etc. are going nuts (and soon -the peter pepper! can't wait to see that one)...any EASY ideas on how to deal with all of this stuff? The 1999 Garden from Hell saw me in the kitchen every night, making salsas and sauces and pepper mashes... I froze some of the peppers but I didn't like their texture after they thawed out.

Help! I'm not into canning but if there is an easy way to do it I'd love to hear about it. Thanks.

  12. Chicken chunks sauteed in bacon fat  & olive oil with a lemon-vodka-cherry tomato cream sauce, tossed with Barilla 4-cheese tortelloni, topped with scallions and bacon.

  13. Store brand Triscuits = ugh.

Store brand Italian Dressing Mix = Good Seasons Italian Dressing Mix, exactly the same ingredients at a much lower price. I go through a lot of that stuff making "Italian Beef" in the Crockpot.

Things not to buy at a dollar store: lighters and batteries.

Safeway Select is a reliable store brand (olive oil, pasta sauces) and their Primo Taglio line of deli meats & cheeses really rocks. Their Lucerne dairy products are good, too.

  14. Made "pizzas" with Trader Joe's garlic naan, cherry tomatoes, banana peppers, serranos and Armenian string cheese. Strange yet good. My boyfriend added tomato sauce to his after they came out of the oven.

  15. I'd like to add my votes for McDonald's McDLT and Popeye's Onion Rings as past fast food glories. Both deliciously memorable fast food experiences, and sorely missed.

What happened to Popeye's onion rings, and when? Do they not offer them any more, or did they replace them with the extruded-onion-derivative-coated-with-wallpaper-paste that other fast food joints serve? I haven't been to a Popeye's in several years and was unaware that their astonishingly good onion rings were no more.

At my Popeye's (Northern Virginia) onion rings are still on the menu. They're made to order but it's so worth the wait.

Does Wendy's still sell fried chicken parts, or just the strips??? I used to love me some Wendy's fried chicken. Mmmm, so SALTY!!!

  16. Got home later than usual, tired and hungry. Was planning on making brats and potato pancakes (frozen but very good) - blew that off. Grabbed a Sierra Nevada, eggs, really good "French" ham from Trader Joe's, fresh banana peppers, fresh basil, red onion, mozzarella & parmesan. Gobbled up some ham while sauteeing the peppers & onions in EVOO and butter. Threw in the ham. Got it all good and carmelized. Dave's Insanity cayenne sauce into the eggs, threw the cheese in there and then the chopped up basil. Let it cook while having another Sierra. Threw the pan under the broiler until nice and browned. Cut into wedges and stuffed into TJ's homestyle tortillas (nuked). An under-30 minute meal...Rachael Ray would be proud of me.

  17. I add a little balsamic just before ladling into the bowls. It really punches up the flavor. I also spread butter and herbs on the bread before toasting it. If I'm feeling really cheesy, I put a slice of cheese at the bottom of the bowl as well as a couple on top of the toasts. A little melted butter over everything is really good too.

Comfort Me: I can't believe an e-gulleter would tell you your food isn't up to standard. There's a whole thread on Tater Tots on here, and I'm damn glad there is.

    So there.

  18. First summer dinner all made with fresh herbs/chiles from our garden: pan roasted chicken breasts with prosciutto and fresh sage, lemon/chicken broth pan sauce; beautiful fresh green beans marinated in herb-steeped red wine vinegar with red onion and garlic, finished with EVOO; fresh corn off the cob sauteed in butter with serrano chiles topped with fresh basil. A few Sweet 100 cherry tomatoes on the side. Cheap chardonnay.

God that was a good dinner.

  19. Thanks Basilgirl! I am off to Books for Cooks tomorrow to purchase that one and give it a try.

Does it give a nice soft focaccia?

    Any more out there?

Well, it's a nice chewy foccacia...but I imagine that it would be softer if it were thicker - I spread it out on my biggest pan and put BIG holes in it, almost like a fougasse...

I like that book very much, but please peruse it before you purchase it on my recommendation! Because it sounds from your first post that you are a much much better baker than I!

  20. My favorite recipe comes from "No Need to Knead" by Suzanne Dunaway. You just stir it all up, let it rise and plop it in the pan. It's a very loose, sticky dough. I always make it thin but I suppose if you used a smaller pan it would come out thicker.

Potato in the dough makes a nice think foccacia.

  21. Grilled bacon and cheddar on cinnamon raisin bread

Bacon, tomato, basil with lots of mayo on toasted white

    BLTs with blue cheese dressing

    Reubens

Ham, red onions, tomatoes, havarti, mustard/mayo on pretzel bread

    Cubans

French dips with provolone and red onion

Roasted pork, Tuscan salted, with fontina or provolone, pressed

    Muffalettas

Genoa, ham, pepperoni, mozzarella on ciabatta, weighted and wrapped in foil, baked in the oven

    I'll stop now
