I stopped by the coolest Asian market yesterday and came home with some really great stuff. And for the first time I found fresh black chickens! I know they can dry out pretty quick if you are not careful (its a lean bird). So anyone have tips or techniques to allow this ingredient to really shine? Thanks, B
