  1. Hi Aclamann, I've made this recipe quite a few times using quick release and haven't encountered this problem. At the end of cooking time when you would be using the quick release method, the cooking liquid should essentially be absorbed. I would think that cooking liquid is escaping during the cooking process. The recipe calls for water/stock rather than milk. Perhaps the milk is foaming and thus escaping from the jar. I wouldn't add any dairy until after cooking. The milk could also scorch/burn and adversely affect the end product. I'd try with water/stock and see if that remedies the problem. Shawn
  2. Hi Architeuthis, I'm assuming you are concerned about the size of the pressure cooker? I can easily fit 2 (3 fit snugly) of the 16oz wide mouth Ball mason jars in my KR 7.4qt. Should be the same in the 5qt, as the width is identical. However, soup for 8-10 might present difficulties with the 5qt model. Shawn
  3. I've been looking around and have had a bit of trouble finding some sieves like the ones recommended in MCAH (200, 50 and 20 mesh). I've spotted a few at select lab sites and they tend to be around $90-$100 each. I'd be curious where some other folks might have gotten theirs. Additionally, I'd be curious what sieves some of you have, and which one(s) you find most useful/valuable. Thanks, Shawn
  4. Hi Architeuthis, As someone who owned a Fagor for years and just upgraded to a Kuhn-Rikon, I highly recommend going with the Kuhn-Rikon, especially if the price isn't prohibitive. I haven't had the Kuhn-Rikon very long, but have noticed a significant difference in ease of use and consistency. The Fagor was certainly serviceable, but a bit more fussy. Also, the Kuhn-Rikon releases very little steam, and allows for cooking with less liquid. I've had great results cooking polenta, caramelized carrot soup and garlic confit from MCAH. My model is the 7.4 quart: http://goo.gl/QwnrJ and the website says this should do soup for 8-10. I can't really judge regarding pork shoulder as I've never cooked one.   5. Thanks pazzaglia. I just have a normal old gas range, so I won't bother with the tamer. Apparently I'm fortunate to have relatively well-behaved burners! Shawn
  6. Hi, I just bought a Kuhn Rikon 7.4l pressure cooker, but wondering if I should pick up a flame protector/tamer since I cook on a gas stove. Wondering if anyone has any experience with (or without) one? Thanks, Shawn
