  1. It seems that the recipe for the Carrot soup differs between Modernist Cuisine and Modernist Cuisine at home. In Modernist Cuisine it calls for 80g of butter for 500g of carrots. In Modernist Cuisine at Home it calls for 113 of butter and also 30g of water. Any idea which one is better? I haven't made the carrot soup with the At Home Recipe, but have used the same principal for making it with butternut squash. Ideas? Thanks. Jack
