  1. I had looked and looked for a copy of the article you wrote on my part of the world--Pensacola--so this was just great! Jim Shirley of the Fish House is one of our closest friends and was thrilled when he was included in The Tour. I'm most impressed that you were able to get a real flavor (pun not completely intended) of our community in such a short stay. Head back to the Emerald Coast again soon! Cheers!! Debi

  3. Well, I just looked up my Amazon.com account and realized we've bought over 65 cookbooks in the past two years through them alone! (And I have 6 on order now.) Our library has an annual book sale which is great for picking up some of the old classics. I'm going to have to guess since I'm at the office that we're somewhere around 350. We have two large bookcases full in the office, a cabinet in the kitchen, a baker's rack, & the side of our entertainment center. I also read tons of trash/detective/military/mystery paperbacks which take up another few hundred square feet of our tiny house. My husband has his collection of "How to Retire Young and Rich" style of books--which we might be able to do if we didn't spend so much money on the darn things! (Not to mention our 4 year old has his own huge stash--never join a kid's book club!!) Debi
  4. This wasn't painted on. (My mom used those for years--she considered her Revere pots top-of-the-line . Those copper bottoms were cleaned with a copper paste every night--they still look brand new.) The 2 qt. WalMart had in stock looked identical to the 3 qt. Chef Mate I bought from Target, right down to the shrink-wrapped lid. The copper bottom had the same outside ridge where it's clad to the stainless & the weight felt the same. Even the rivets to the handles looked the same. They also had a "professional" all stainless line which was again priced just under Target's CM. (Now watch that the only place in the world they carry this is Auburn, Alabama! I don't see it on their web-site.) EDIT: Oh wait!! I did find them on the internet--Sold at Target through Amazon!!! DOUBLE EDIT: I did notice that the copper bottomed said to limit to 450o & the stainless said 500o. (Note the low rating from the Amazon guy who managed to ruin two pots. Geeze.....)   5. So the article says..... Moulton, 50, says she had not written a book previously because she had just been too busy. After all, she has three jobs: program host at the Food Network, chef at Gourmet and food editor at ABC's "Good Morning, America." And about the children..... She also is the mother of 16-year-old Ruthie and 12-year-old Sam. I like her because she actually makes mistakes in the kitchen! Plus she's had some interesting guests along the way. My husband isn't quite as big of a fan, though. Debi
  6. I bought the 3 qt copper bottomed Chef Mate ($19.99) & an 8 qt "professional" stockpot for $34.99. The 8 qt includes a pasta-cooking insert, a vegetable steamer insert & glass lid. It's the perfect size for our family of three! Also, I was at a Super WalMart yesterday in Auburn, Alabama (had to take our dog up to the vet school) and they had what looked like the identical products under the name Revere. They were sold out of the 3 qt. copper bottomed, but it was on sale for $16.49! Might be worth a look.... Thanks for sharing - Debi

  8. Oh man, I love this thread! Here in Pensacola, McGuires Irish Pub still age dries their beef. A short stop when heading back with the stock--as long as they don't make a detour through Trader Jon's! On the otherhand, we can probably put up a Marine chopper to do a dramatic transfer if the range becomes an issue. My dad, an ol' Air Force Air Rescue flight chef, tells of worse things being done over the Gulf! Can't wait! Can't we get a preview? Debi
  9. He loves hominy, go figure. We did a dinnner recently for 36 people and he called it "The No Grits, No Greens" menu. Fortunately we had lots of "transplants" there. Debi
  10. Fried corn bread (heat peanut oil in the cast iron skillet you got from your momma 'til it's very hot. Pour in your batter and bake. The crust will be crispy, dark brown, oily & yummy!) Rhubarb/Strawberry pie Apple Butter made by your great-aunt Mississippi Mud Cake Moon Pies Homemade ice cream when you took turns sitting on the churn while the men turned, added rock salt & chipped ice (using an ice pick, of course) Pickled everything! Divinty Squash casserole with saltines & butter topping Broccoli casserole with Cheez Whiz Veggies that are always cooked to mush Sawmill gravy (basically a milk gravy made after Jimmy Dean sausages are fried) When my dad was stationed in Germany (USAF) in the early 60's, family members Air Mailed corn meal & grits to us! Speckled butter beans And I still eat tons of mayo/tomato sandwiches every summer! A proud Southern Girl of many generations married to a Yank who won't even touch a Grit! Debi
  11. Mike - I'm actually doing this one this weekend. The Chef is a good friend & I tried his "test" batch out -- pretty yummy! Short Ribs If you do a search on the site (our local newspaper) Chef Jim has also included recipes for chili, ham, chicken, etc. The ones I've tried have been super easy but very nice.   12. Hope you don't mind me jumping in here. Our local newspaper recently did a series of articles about crock pot cooking. They had a local chef (and I should disclaim, a good friend) work up some recipes. I haven't tried them myself yet, but I did try some of Chef Jim's tests and they were pretty good.
