  1. Anyone have a good recipe for this? I came across a few and they all say to let it sit in a ton of salt overnight. Anyone tried these? Successful? http://www.cuisinetechnology.com/blog/recipe-sous-vide/sous-vide-confit-of-duck-leg/ http://www.foodandwine.com/recipes/duck-confit-cooked-in-a-pouch Couldn't find the recipe for Thomas Keller's but this blog talks about it: http://www.tinyurbankitchen.com/2010/09/duck-leg-confit-sous-vide.html
  2. If you're feeling lazy sometimes (which I often do), a travel French press mug is the way to go! Heat your water to boiling (take it off the heat and wait 30 seconds before pouring over your coffee) Grind your beans using any kind of grinder, burr might be best on a coarse grind Dump the ground coffee into your travel mug (~$20), something like this: http://www.zappos.com/bodum-travel-press-coffee-maker-off-white?ef_id=Uh9hQgAAADDgnEmM:20130920150914:s&zfcTest=fcl%3A3 Pour the slightly cooled hot water over the ground coffee- at this point you cover the mug and you can be on your merry way to work Wait 4 minutes, then press the coffee grinds down
  3. I have the OXO too and there's definitely a learning curve to it. It depends on what you're trying to mill. I've had really bad luck with canned tomatoes (it might depend on the brand of canned tomato?), but it was great for fresh tomatoes and boiled potatoes. I wrote about it a little while ago- http://www.iniskitchen.com/2013/09/pureed-tomatoes-with-oxo-food-mill.html Let us know which one you ended up getting and how it turned out!
  4. Blendtec should be ashamed of themselves. Though to be fair, I used the Vitamix recipe binder that came with my parents' Vitamix YEARS ago (around 9) and they had a recipe for French Onion Soup- that I made- that just basically just told me to chop the onions in beef stock using the blender, then boil them together. Needless to say, it didn't taste good.
