One of the great things about St. Patrick’s corned beef must be the copious amounts of leftovers … Baked a rye loaf flavored with caraway seeds … Sandwiches with the bread fresh out of the oven, stuffed with corned beef, a bit of jellied stock and a relish made from mustard, lemon & black pepper mayonnaise, garlic, chopped up cornichons and chopped up braised cabbage. Happy St. Patrick’s Day 🍀 Aperitif … Homemade corned beef, cooked SV for 10h@82oC. Potatoes, carrots and cabbage cooked in the SV juices; tender cabbage seared afterwards. While the beef looks a bit weird, it was tender & juicy, and sliced well. Rest of the family opted for burgers 🙄 … Dessert …

Croissant with Comté, bacon and a fried egg. Sorry, no money shot of the egg yolk oozing out - by the split second the yolk molecules needed to overcome their inner viscosity after the releasing cut the whole croissant had already been consumed 🤭

Bit busy recently, so pretty much only “fire & forget” type of dishes. Critically acclaimed in the last days were … Stuffed aubergines … Braised neck of lamb (a cut that was wholeheartedly endorsed by my Turkish butcher and it didn’t disappoint - super moist after 6h braise) … Served with braised chickpeas and tzaziki …

I think investing into something easy to clean, and with sufficient power, would be the way to go. I own a Tefal Optigrill+ and it fulfills both requirements …

Got this really nice sliced Römerbraten (cured & smoked pork collar; similar to Italian coppa, but not aged). Thought that would - briefly fried - do very well on eggs Benedict … And it does ! For “mass preparation” I have successfully converted the poached eggs to 5 min eggs. Perfect yolk results without all the stress … Happy faces 🤗

My parents have been with us for three days and will be leaving tomorrow morning, so tonight we had several rounds of Rummikub and … SV Kalbstafelspitz (veal) … Snacks & “Italian” string beans … Plus some whiskeys & Japanese snacks (and a long talk) for my father and me. A great evening 🤗

The lentils are boiled with carrot, celeriac and bay leaf. When they are tender, you’ll drain and reserve the liquid. In a second pot, you fry an onion in butter, then add flour and make a brown roux. Add the lentil liquid, some tomato paste, salt, vinegar and a dash of sugar. Boil for some minutes, add the lentil and adjust the taste.

I think it is exactly this: getting the tuning just about right (with the powder, the little “add all other ingredients” phrase that really makes the difference … As does taking the time to lay it out for us - well, actually, for all.
