  1. I saw a new flavor of ice cream prepared by my colleague, one day in the restaurant. It was amazing. Following is the recipe.


    2 egg yolks

    2 tablespoons dry green tea

    1 tablespoon sugar

    1/2 vanilla pod

    1 1/4 cups double (heavy) cream

    1/4 cup caster sugar

    1 1/4 cups milk

    2 tablespoons boiling water

    Take the dry green tea and soak in boiling water with the tablespoon of sugar for 10-12 minutes.

    Into a saucepan put the vanilla pod and milk and gently bring to the boil then pour this over the tea. Leave to stand for 5 or 6 minutes.

    Beat the egg yolks with the 1/4 cup caster sugar in a separate bowl and then strain the milk mixture into it.

    Transfer to a saucepan and gently heat, stirring all the time, until the mixture is thick. Leave to cool. Whip the double (heavy) cream and fold into the cooled tea mixture. Transfer the complete mixture into an ice cream maker and follow the usual procedure of making ice-cream.

    Serve it and enjoy the extremely new flavor. :smile:

  2. I'm doing a culinary course and find it really helpful. I'm also working in a restaurant where I'm able to use the knowledge gained from culinary school. Now you all must be wondering how I'm managing studies and work together. Actually I'm doing an online culinary arts program that to from an accredited university. They have provided me all the study materials and also giving online lectures. I really enjoy this course. Snacking is very much necessary to keep energy levels going and avoid weight gain. for that only few steer clear of foods with lots of simple carbohydrates (sugars) like candy bars or soda is enough. Or else preparing foods that contain complex carbohydrates like whole-grain breads and cereals and combine them with protein-rich snacks such as peanut butter or low-fat yogurt or cheese can also be opted. It's very important to take healthy snacks as it could add to the calories.

  4. Most of the students entering into culinary arts programs have the similar dilemma. I also had it. When I started my career I was in a small neighborhood burger joint type places. I felt extremely trapped in a specific niche. I wanted to work in big restaurants, but nowhere I was getting any opportunity.

    Then I thought of enrolling culinary program. I was very much concerned about the financials, thinking it's worthy or not. Then finally I opted online culinary art program. When once I enrolled in school, I got a much better job at a much better restaurant, simply through virtue of being a culinary student. And once I finished, I was able to get a stage and eventually a job best restaurant of our place.   5. I have been reading up a bit on Wheat Grass lately and have started to incorporate it in powder form in my daily juices.

    Anything I should know (pro's and con's) about adding wheat grass to my daily diet?

    I'm also fond of chewing gums. Just when I'm getting bored I chew one. I usually go for Wrigley's and Doublemint as they are mint flavored. But I'm not as regular as you. I'm taking 1-2 a day. Hope you know that too much of these chewing gums are harmful for our health. It can cause bloating in addition to several other bad effects. So try and reduce the amount as it's not good for your body.

  7. I don't know if you've heard about this or not. I went to a restaurant once. I'm very fond of sweets, so I ordered Cassata cake. The waiter said that it's an Italian dish. That was the day and hence forth every time I go to that restaurant I order this cake only. Really it's yummy. I tried to make it at home also, but couldn't make it as good as that restaurant. In general I'm fond of every Italian dish.
