    Breakfast! 2013

    Recent take on eggs benedict. Polenta discs fried in bacon fat (instead of english muffin), speck instead of ham, spinach, poached eggs and garlic aioli.
  2. Thanks for the tip. I was lucky with these six. But, I like the idea of poaching in butter.
  3. This weekend I discovered sea scallops with attached roe at Citarella. I didn't know they existed. I prepared them very simply with a quick sear and served them with basil and a roasted corn relish. They were remarkable. I would be interested if there are any other ideas on how to prepare them.
  4. A good mandoline to create "matchsticks" with knife work for me is fastest way to achieve perfect dice. By time I pull out the Cuisinart and switch between ingredieants with cleaning, etc., the amount of time and work is not worth it.

    What temperature and how long did you smoke them?
  6. My incursions into vegetarian eating is when I get together with one of my daughters. She and her husband have been eating vegetarian for a long time. It has been interesting and educational to spend time with them and focus on cooking vegetarian specifically because we are with them. So it is a little like Fat Guy's week of vegeterian eating. For me, some stuff doesn't work at all. But, mostly we have great meals together because we are both creative and adventurous cooks and eaters
