One of my favorite sides for Thanksgiving (if I'm being forced to do a relatively traditional Thanksgiving dinner, which I usually try to avoid) is whipped chipotle sweet potatoes. I find many sweet potato dishes (i.e. the ones with marshmallows or added sugar) way too sweet, but the chipotle works nicely to offset the sweetness.

There's also a fabulous recipe I've made for ancho chiles stuffed with a pumpkin puree. (I can't find the recipe right now. It might have been from the L.A. Times a number of years ago?) The dried chiles are rehydrated in a sweet and sour marinade, then cut open and stuffed with the puree and baked to heat them through. These are way better than any turkey I've ever eaten.

    Molly,

that chipotle sweet potato dish sounds wonderful!  I will pass on the sweet marshmallow casserole every time but this one looks like a winner.  Thanks for posting.

For grating hard cheeses I use the Cuisinart - I have the DLC-XP 20 cup and it came with this fine shredding disc which makes quick work of parm, romano, asiago, etc.

Cuisinart  also makes fine grating ;discs for the 14 cup, 7 and 11 cups.

I use a lot of these cheeses in my breads and it takes forever to grate 1 1/2 to 2 cups of the stuff.   I use the microplane if I only need a little but for recipes, I use the machine.

Wow!  Thanks for all that information!  I thought I had the full set of blades too but when I looked through them I discovered that this one was not included.

Today was a dreary rainy day, so I had to bake something. (No, I do not notice any disconnect in that sentence.) This is a favorite that I haven't made in quite some time: Carole Walter's Dried Cherry Almond Pound Cake. It is so good. It freezes beautifully. (Although this one will be eaten!).

I ordered the Pro salad shooter and will let you know how well it works when it arrives next week.  I think it just might be the answer to my cheese grating woes!

Sorry I keep calling you 'Jo'!

  8. I l-o-v-e turkey when it's well cooked. And I have actually  done that!  However the best part of turkey is the dressing and the gravy, but that still won't make up dry, tasteless cheap turkey.

  9. Jo,

I posted  the question about grating parmesan and other hard cheese and was told ithe Sald Shooter did it well.

My Cuisinart is big and heavy and stored under my counters so it's a real pita to get it set up, cleaned and put away.

I now grate my Pam on a rasp since I don't usually need a whole lot of it at a time.

And I know Ina Gatem shreds her Pam in her big FP in big quantities and then stores it in fridge or freezer.

I could manage that since it’s be a very occasional job.

The only price I was able to find for it was on the Amazon . uk site where it was £625  which converts to about US$820.  Not sure that it is available in North America at the moment.

Hot damn!  Yet another spendy appliance I don't need but can covet nevertheless,

  11. The plumbing in my home was done with copper pipe and I've had nothing but trouble with it

The hot water runs develop pin holes and I’ve had at least five leaks.  I'm currently waiting for my drywall guy to come and fix this last repair.  The original owner had some of the pipe torn out and replaced with flex but The harder-to-get-to pipe remains.

this is not to say there's anything wrong with copper pipe, I believe that this job was done with poor quality or defective pipe.

In my case, I almost need to keep my plumber on retainer.

  12. When I last attempted a recipe for mac & cheese I was disappointed that said recipe called for 4 cups of grated cheddar.

I really hate grating that much cheese because I don't like having to wash up my big 14-cup food processor  and I  hate grating on a box grater even more, it's hard on my hands and it takes a bit of effort.

Isn't there a (somewhat) easier way?  I've looked at the Moilinex-type rotary graters; are they good for larger amounts of cheese?  Or maybe something like this?

    Comments, please.

This was breakfast, toasted in the CSO.

I'm impressed with this recipe...just the right amount of sweetness and cinnamon.  Very tasty and I'll definitely make it again.  I'll use more raisins though, I love raisins In baked goods.

The electric knife made it easy to slice.

Would love to see the crumb.

Yes, I hadn't sliced it yet, had to wait for it to cool.  I wrapped it and will slice it this morning.  It feels lighter, less dense that I usually get with my other recipes.  Will see.
