  1. I'm sorry to have to cancel but I have had some family issues recently develop and I won't be able to make it this year. I was really looking forward to meeting up with all of you again. Maybe next year.
  2. I reset my password so I could finally log in. Booked my room today so I will be there. For those of you who are thinking of attending but are worried about your experience level, don’t be. Last year I went with no experience and had an amazing time. I found that everyone was eager to help, explain things and teach. You will learn more than you think you will. I vote for dinner at the school. It will give us more time to work on our projects or demos. A full day in the kitchen then walking down the hall for dinner was perfect last year. Robert, last year, a Callebaut rep was there with all kinds of chocolate for us to use. What is the plan for chocolate this year? Looking forward to the conference and reconnecting with all of you from last year.
  3. I had so much fun in Canada last time so put me in the Pretty Definite category. 6 months is a little far out for planning for me but I'll be there if at all possible. I will have at least one class, possibly two, completed at the Callebaut Chocolate Academy in Chicago by then so I should have something to contribute this time:) My class is in a couple of weeks so I will post when I get back and then have some ideas for topics but I always like the discussions on the business side things. I've been MIA from here for far too long, thanks for the message Robert.

  5. Wow! What an experience, brought me back to my time at the CIA. Kerry deserves a tremendous amount of praise for organizing an absolutely wonderful conference. Being a new member and having a total of 2 posts I came to the conference to learn and it was more than I could have hoped for. It was a privilege meeting all of you and thank you for the wealth of information you shared with me. I must have asked Chocolot a thousand questions from tempering, packaging to running a successful business, there was not a questions she didn’t patiently answer. The caramel demo Bob gave me was nothing short of perfect, I can’t wait to give it another try. Conversations with Chris and his wife ranged from living in Sooner Country to the aerodynamics of a Formula One car. Chris, when your wife gets tenure just keep telling yourself it was all about the chocolates. Instead of sifting through my 100+ pics I have been busy contacting a granite supplier, a steel fabricator for confectionary frames and Lotte Andersson from Callebaut for a supplier in NYC. I came to the conference with only a Little Dipper and left with a long list of equipment I need. Thanks again to all of you! Kerry asked that I post some pictures of the Chef Rubber kit that was given to us so here they are.
  6. I'm good with all the plans but let me confirm the timing so I don't miss anything. First event is Friday at 10:00am at Landies Candies, correct? I'm staying in Buffalo Thursday night so I will meet everyone at Landies and I'll also have my car to help with transportation for the rest of the weekend. I have a Hilliard’s Little Dipper to bring in case we need it and Kerry said I should declare it at the boarder. I searched Canadian Customs but could not find the procedure, do I just tell the crossing officer when I drive up or do I need forms filled out?
  7. Hi Kerry, I am a new member and would like to attend the conference. I graduated from the Culinary Institute of America in New York years ago but have just started to explore chocolate and confections and thought this would be a great opportunity to learn and meet some of you. I will be driving up from Queens, NY so my car will be available if needed and my wife's family is from Buffalo so I am somewhat familiar with driving in that area. Please let me know if there is any personal or contact information I need to provide for the events. Also, I noticed the hotel room block expires on the 14th so I will take care of that very soon.
