  1. Chris, I am not familiar with Maine shrimp - none in South Africa - but with medium sized prawns I would have done in boiling water for 30 seconds. Do you think I would be ok with these sous vide as you cooked your shrimp. If I overcook prawns they tend to go mushy. Dave Kennealy
