Shelby ~ I am just guessing but, it sounds like the taste you are tasting is lecithin. Yuk. Can't stand the stuff.

Maldon is quite good and I use it often as well as others. Depends on what I'm making.

I've been speaking with Steve to see if there was going to be information soon and, here it is! Can anyone attend? I'm new to the field so, I'm looking at everything.
