  1. PedroG I have found "The Flavour Thesauras" to be a good book with some interesting combinations and it also gives ideas for using the flavour combinations. I would recommend "ideas in food" first though? I find Khymos.org TGWT site very good also and foodpairing.be My copy of Modernist Cuisine arrived last Monday 7th March :-)
  2. Thank you, I have just ordered from amazon.ca with express delivery to Ireland for 425 Can$. thats working out less than €300!! This is my third time to order. Not sure should i cancel my order from amazon.com yet though? ($429)I have had pre-ordered books "not available" after release, should i hold on to both?
  3. I agree, great reading. I have the book ordered since it was released and really hope that there will be no complications with delivery to Ireland. (ordered in May for 500 and then re-ordered in June for 429.85 dollars!!)Not to pick holes in the New York Times article, but, was the sous vide thread not started by Fay Jai? or was this a pseudonym for nathanm? i'm just curious.

  6. Hi Badrabbit, I am vac packing the oil and infusions before placing them into the water bath. Oil in the bath would be alot more messy and wasteful. i am just trying to see there is a certain temperature or time window for maximum infusion and quality?
  7. Hi Lesliec, I am using a trial and error method at the moment. Does anybody know what is the optimum temperature to infuse flavours into oil. I am using oil and flavours in a vac pac bag, but will they infuse better at a certain temperature and in a certain time frame? Does anyone know if this might be covered in Modernist Cuisine?
  8. Hi all, I have been searching through this thread and cannot seem to find a method or recommended quantities, temp and times for making/infusing oils. i am looking to make an oil flavoured with lemon or orange and possibly bergamot later in the season. An recommendations? Thanks
  9. I have pre-ordered "Modernist Cuisine" from amazon.com as its not on the amazon.co.uk site? I really hope that they deliver to Ireland. Would be a great Christmas present to myself!! What is the expected release date, or have details been finalized yet?
