I am trying to make a reverse spherification using a recipe (http://www.molecularmixology.co.uk/forum/viewtopic.php?f=7&t=26) that utilizes calcium lactate. I don't have calcium lactate but I do have Texturas Gluco (calcium gluconate and calcium lactate). Can I substitute the Gluco for the calcium lactate? What ratio should I use? Thank you! wayne314
