    serrano ham

    Nothing better than slices of serrano ham next to triangles of manchego cheese and some slices of quince paste (membrillo). In Spain, that would come with miniature breadsticks. Serrano ham also tastes delicious layered over toasted or grilled bread that's been rubbed with a raw garlic clove, the guts of a very ripe tomato and some olive oil.
  2. Egulleters, I'm working on a story for the Wall Street Journal about bathroom attendants in restaurants. I would love to hear from people who have encountered them and have feelings--positive or negative--about them. I'd especially like to hear about specific bathroom attendant encounters.   3. I am a reporter working on an article about whether fishing-method terms on menus such as "Dayboat," Troll-Caught," "Harpooned" and "Line-Caught" mean anything to diners. Have you ever encountered these terms on a menu? When? Where? Do they confuse you or clarify things for you? Do you appreciate restaurants including this information or not?   4. Just to clarify for those reading along, the full names of these companies are: Wüsthof-Trident Zwilling J.A. Henckels So you'll see some people referring to Wusthof as Trident, etc.
  5. I don't know if it's entirely evident from these photos, but here are two comparable knives (Grand Prix versus Four Star) from Wusthof (top) and Henckels (bottom). I'm pretty sure these are both 8" chef's knives being depicted, though unfortunately the images are not scaled identically. Quality of construction aside, I just think the Wusthof blade has a superior shape. Do you see how triangular the Henckels is by comparison? It really screws up the rocking motion you need to get going to be efficient at repetitive chopping tasks. It's also a much less substantial knife, though that's harder to see. Wusthof: Henckels:
