  1. I was lucky enough to get to assist Amoretti in Ciril's class in the 2007 and I also got the honor of taking the desserts from the competitors to the judges! Carymax called me for the 2008 championship and asked that I be Collette Peters assistant however I had to turn them down due to work, I completely missed out on a opportunity of a lifetime. If I only knew then what I know now I would have been there!!!
  2. Not tring to take away from this site, it is a great site, but for any ideas you may need or pictures, how-tos, etc, you should check out cakecentral.com, thousands of pics, hundreds of ideas. Sorry if this has already been mentioned, but I am new to this site.
  3. As far as a chocolate book goes I recommend Chocolate Epiphan by Francois Payard and for bread books anything from Peter Reinhart or Ciril Hitz. HTH
