  1. Being the "Best" Chef is very subjective, do you want to be the best French Chef? What makes you the best chef? Your food? The way you treat your staff? I've had some of the best food in my life at some very small restaurants in the International district, and I have eaten at all the best restaurants in Seattle. Some of the "best chefs" out there are huge a holes to their cooks and don't pay them properly or provide basic heath insurance. Find out what style of food you love best whether its four star french cuisine or simple yet perfect Piedmontese hand made stufffed pastas, or whatever else floats your boat. Whats more important to chefs when they are looking for new cooks is the ability to cook their food, not someone elses. While you may have 3 great restaurants under your belt, but if you can only do a dish the way Emeril does it, than a new chef isn't gonna want to hire you. Be humble, be eager to learn, and always be respectful. goodluck
  2. I didnt want this thread to turn out to be a discussion on whether Alinea is a trendy place or not, yes I am using the word trendy instead of fad because I see it as a better fit. I just wanted to see if you guys thought it was as funny as I did. I dont think Tom Colicchio or Coke was trying to take a stab at a particular chef, only at that style of restaurant.
  3. I think many people would agree that molecular gastronomy is a fad, a current one that seems very popular. I think your taking the term as being a purely negative term but really I just meant it as its the hottest thing, the trendiest thing. I personally love the style of Tom Collicchio's cooking and of his book "Think Like a Chef", and can identify with superbly prepared, simple seasonal dishes that seem to be his signature. That is something that CANNOT be identified as a "fad" because its a proven concept, and the human race has been eating seasonally for thousands of years. I'm sorry if I've offended anyone by calling Alinea a fad.
  4. Has anyone else seen the new coke commercial with Tom Colicchio? He is in a restaurant similar to something like Alinea or Moto and they show all these dishes like bacon on a stand as well as some other stereotypical dishes (spheres) and He orders a coke. The bartender tries to put some orchid type garnish on it and he waves him off, and says when you start with good taste you dont need anything else. check it out, Commercial What do you think? I thought it was hilarious, I love that he pokes fun at all these new trendy restaurants like Alinea and moto and such
  5. Yea, Im in Seattle too, Fremont and its terrible...the roads are rediculous. Fortunately It's a perfect time to break out some of the stuff in my freezer, like some short ribs!
  6. I've been snowed in for the last 4 or 5 days and I've been dining on some serious cold weather food. I was wondering what other members favorite cold weather meals include. I made some curry chicken from Vij Vikram's cookbook, and its not spicy but it warmed me up for sure! I also had some amazing Pork dumpling soup that was just amazing, sitting by the fireplace eating.
  7. He's taking the money while they're still throwing it at him! I don't blame him, and anyone who says he's a "sell out" is just delusional.
