  1. Hi all, I'm currently living in Adelaide (South Australia) and have been reading a lot about Port Lincoln (just around the corner on the Eyre Peninsula) being the Seafood capital of Australia. I therefore want to plan a little foodie trip this summer, but having tried to find some information on what restaurants to go to or what producers to visit, I have not been very succesful. I'm therefore turning to you, loyal e-gullet foodies, to advise me on where to go to get the best oysters, mussels, rock lobster and blue fin (among other things). Any help would be greatly appreciated! You haven't let me down in the past....I look forward to hearing from you all!
  2. Hey, I've been challenged to a 'cook off' with a local Chinese restaurant by some friends and have decided to do some Siu Yook as I want to try some of the suggestions in this thread. I was thinking of preparing the skin with Vodka but will try Lye or diluted Lye water also to see if I get any better results while I'm at it. One question I had though was about the marinade....it looks as though the marinade suggested here is a relatively dry one. I was wondering what your thoughts were on using similar spices in a wetter brine for a couple of days? While the skin is drying out, the meat could be immersed in a brine to tenderise. Although this probably isn't the traditional method, is there any reason why this wouldn't work? Would the meat be too salty?
  3. Will definitely look at visiting Babbo....and Balthazar.... I went to the Fat duck a few years ago, so kind of wanted to see what NY had to offer in that respect, I also wanted to go to a modern French restaurant like Chez Bruce over here and then mix that up with good American fare. I'm not really fussy, I'm just hoping for some suggestions of must go to places while i'm there and I'd happily repay the favour if anyone needed some help with London restaurants!
  4. I'm coming over to New York from London at the end of November with a couple of friends in order to sample the best NY has to offer. It's been a long time coming and having read many books and articles about the NY restaurant scene, I'm very excited to experience the tangible side of it! I reckon I have 3 dinners and 2 lunches (and perhaps a couple of breakfasts) to fill, I have my options, but I'd really like some feedback from those who know best! I'm looking for a some fine dining, examples of NY best and a good steak: My shortlist is: Dinner WD-50 Roberts (for steak?) Daniel Le Bernadin Tailor Per Se Lunch Jean Georges Sushi Yasuda For the dinners, I'd like to try the tasting menus but not sure I can stretch to Per Se's prices! I know this type of topic has been discussed before here, but things change and there may be new restaurants that I don't know about or I've overlooked! I'm open to all suggestions....
