  1. I am a Cook who has recently moved to Paris. I adore most things food related and am looking for people to share food expeiences with, here in Paris. I am attached and am in no way looking for romance, just to share food with people who are deeply passionate the joys that food and drink can bring. In my career I am focused more on Chez Pannise/St john inspired places but in exploration of the food scene here I am just as interested in three star temples as I am in delapidated Ethiopian restaurants. IM me if you like the sound of it!
  2. We had several fantastic meals at Restaurant Cafe Berbere, a small family place serving mainly tourists. The food is simple and inexpensive. Soup, tagine and fruit will cost about 12euros and is really good. The Soupe Maroccaine and the Chicken Tagine are dishes i will never forget. Matt ← thanks matt!! It is my last day in morocco today, i will check out cafe berbere tonight. i will also post other food highlights and low lights of my three weeks here....
  3. correct, he has left. i am sure it was, and will be, a good thing for the restaurant.
  4. 400. around 75 i have not opened, yet. I only really use, and love, 15 of them
  5. i have not read this entire thread so it might have already been said. i have made a lot of different harissa recipes and tried plenty abroad. the best i have had so far is from the moro cookbook. i think it is fantastic, make sure you don't get lazy and hunt down some black cumin.
  6. i agree, it was the best in the series. i too would sell my own grandma to have been at that table. i don't believe that i am easily sucked in by hype and am very critical but i have eaten at his restaurant a couple of times and in my opinion, he really is at the top of the pile.
  7. ps. i think it would be great if you opened such a venture!!
  8. i agree about midsummer house (the tarte tatin with garlic foam is still one of the best dishes i have ever tasted!!) but would not rate alimentum. have you ever been to cotto? fantastic cakes, amazing chocolates and superb desserts. they also do the best hot chocolate, simply organic valrhona dark melted in some vanilla infused cream and milk. they are not in the same vein formality wise though. as for william curely, i went recently and it was very good.
  9. ]"Underpinned by strong ethical values, Alimentum will serve locally sourced produce, prepared simply, with passion and integrity." you must have one hell of a network of local suppliers with a whole army of heated greenhouses, maybe they source things from the botanical gardens, can't think how else they would be "local and ethical" a few things i picked of a recent menu: watermelon, iberico ham, truffles, lychee, avocado, foie gras, figs, roquefort, foriegn cheese and spanish pork and as for green beans and courgette flowers in november... apart from sounding like too many other mediocre restaurant menus it does not look too ethical or celabratory of british produce!! i know that everything can't be local but you could try.
  10. i am a restaurant cook going to morocco for a month and would like any advice on the best and most traditional cooking courses that are available out there. also any must visit restaurants/markets/farms or anything food related would be greatly appreciated!! thank you.
