    I'd love to see pictures of what you have. I do a cottage cheese layer just like you described. Ronnie doesn't care for ricotta cheese so that method works nicely. When you already have the sauce etc. made like you do, putting a lasagna together is much less daunting.

    Thank you so much! That dish is absolutely perfect for a lasagna for the two of us. It used to be my Grammy's. A search of the W logo tells me it's a McKee GLASBAKE 1940's+ Westinghouse clear lidded oven-refrigerator dish. There are several listed on EBAY. I don't know if I have ever had, or seen the lid. It's 3 1/2 inches deep and 8 inches long.

    I'm really far behind posting--not that anyone is dying to see what I eat every night 🤣. My MacBook is SO old and I'm having keyboard problems along with other stuff. I have a brand new one sitting beside me. In it's box. I'm not looking forward to setting up a new one after all of these years. UGH. Anyway, on to the food: Venison cheeseburger pizza and salad Potato salad, wings and beans Blackberry galette for dessert Ronnie came home with another cheap rotiss. chicken so I was looking for something new and exciting to do lol. Came across buffalo chicken "pizza". Base of blue cheese dressing. Topped with chicken mixed with melted butter and Frank's Hot Wing Sauce, crumbled blue cheese, mozz. cheese and green onions. I told Ronnie not to think of it as pizza.....he seemed to like it. I bet he doesn't ask for it again though lol. Venison chili cheese dogs Chicken quesadillas, beans and rice More wings with Mac and cheese and asparagus. Misfits has had good asparagus for a few weeks. Had leftover beans so did kind of a huevos rancheros thing with an avocado salad Haven't made lasagna in a while Bass piccata with mushrooms and salad Corned a couple of goose breasts. Did those yesterday SV at 179F for 6 hours. Made for a really good reuben. Salad and fries to go with Another galette --blueberry and raspberry. I know I make these a lot but we enjoy them and it's the perfect size for two of us.
  4. I've been so hungry for a fattoush salad but.. I was too lazy over the summer to make it. Ugh. What I would give to eat your leftovers right now I also love the signs...especially the women are always right and your opinion wasn't in the recipe. I might need those in my kitchen lol.

    Trust me when I say that they are not super similar to real tamales lol. Yes, meat filling surrounded by masa and each tamale is wrapped in wax paper. And yes, already cooked. You just warm them up.

    @Norm Matthews Beautiful bread! Chicken broccoli Alfredo with a Caesar salad Ribs with spinach and hatch Chile macaroni @Smithyhas been talking about using packaged foods for convenience over here . I've been doing that for a bit, too. Sometimes I use jarred Alfredo sauce instead of making my own. Bertolli's sauce tastes just as good to me. There are just some nights I don't feel like thinking lol. Some things like spaghetti sauce I can throw together in my sleep. Other things like curries make me have to follow recipes...dig out ingredients that are buried....etc. I ordered this off of Misfits. It's good. I see the salt content is high though. Quick and easy to add already cooked chicken. I also did a couple egg rolls that I previously made and had in the freezer I came across a can of tamales in the pantry. I love canned tamales. Ronnie does not. He thinks the meat tastes weird. I have tried to explain to him that he shouldn't think of it as "meat" per se. Think of it as a .....canned tamale but that hasn't worked lol. Anyway I thought about @Kim Shook's dish that she would make when her and Mr. Kim were first married. I searched but I could not find on EG where she posted how she made it so I winged it. Most recipes online showed covering them with canned chili but I didn't have any so I just did tamales sprinkled with sharp cheddar, onions and Fritos baked in the oven until bubbly. I loved it. Ronnie did not lol. Quesadillas to use up leftover steak and beans to go with. Ronnie got one last goose before the season closed. Brined it for a couple of days. Seasoned and stuffed with lemon wedges and fresh thyme After roasting scalloped potatoes and asparagus to go with Last night venison spaghetti red and blueberry bread for dessert
  7. Ours was the same as it has been for a few years. Muffuletta and instead of King Cake I did cinnamon rolls again.
  8. I could definitely see making bacon in a panini maker like this. Mine slopes downward and came with a little plastic tray to catch grease, juices etc. but it's a pain an never quite caught everything.
  9. You're inspiring me to try making kraut again. I made it the first time using the recipe in Deep Run Roots and it was wonderful. Since then I've tried two more times and it's ended up smelling terrible and off and I've had to toss it.

  11. I read somewhere about someone making bacon in their panini maker. I remember thinking it's easier to do in a regular skillet but what do I know lol.
  12. Nope, not a lick of oil. I turn the machine on with the lid open, plop a tortilla on, place the fillings, plop another tortilla on top, close the lid and that's it. I use shredded for quesadillas....and usually slices for sandwiches. It is easy to over-cheese .....but, like you discovered, the cheese crisps up and it's one of the best parts.
  13. I use my panini maker for quesadillas. Works GREAT. No oil or anything. Healthier and they crisp up wonderfully.

  15. Valentine's Day is Wednesday! I'm trying to decide between the two lobster tails I have left in the freezer or......something else lol.
  16. Fat Tuesday is upon us tomorrow already. I have my usual muffuletta from Central Grocery on order. Hopefully it gets here tomorrow.

    A lot of chicken dishes these past few days. Mostly because we picked up a rotisserie chicken from the grocery store. I can't pass that up for $4.00. Chicken/hatch chile enchiladas Mushroom salad With chicken pot pie and a Caesar salad Canadian bacon/mushroom/green pepper (poor Rotuts isn't going to like this lol) Chicken piccata with angel hair and Brussels sprouts Chicken quesadillas Chicken Pho-ish
  18. WHAT A GAME!!!!! We loved every second of it. I ended up doing more cooking than I wanted to during the game. No matter how early I start that always seems to happen. I fried up tons of livers and gizzards (pressure cooked the gizzards for an hour after frying) Duck/goose hearts, livers and gizzards Yeah. It was a lot of frying lol. Gravy for dipping Asian chicken salad Pigs in a blanket Deviled eggs and pickled mushrooms I bought these cute little football truffles for dessert Only 6 more months until pre-season starts!!
  19. Frito pie. Yes. Well, that just sucks that you can't see the game! Ronnie would be having a meltdown.
  20. It's tomorrow. Anyone doing anything? My poor Denver Broncos....sigh. But, the Chiefs are Ronnie's team so at least we have that. Kind of a love/hate relationship for me. The Chiefs, not Ronnie lol. My late Grammy and Ronnie love them.....My mom and I love the Broncos so we are arch enemies unless the Chiefs are in the Super Bowl. And I do like Kelce (not because of Taylor Swift I swear) and Mahomes. Anyway. I really don't want to be doing a lot of cooking during the game. Ronnie requested fried livers and gizzards again. I have chicken, duck and goose. I'm going to try to get everything else done before game time. Arby's frozen curly fries. Maybe deviled eggs. Pigs in a blanket. Maybe some kind of salad to be a bit healthy-ish. Football shaped brownie bites for dessert. I'm going to look at past Super Bowl threads here for more ideas. Edit: I see in the past I was booing the Super Bowl Chiefs.....I must be getting soft in my old age.
  21. Thanks for this! Your ears should have been burning yesterday because I talked about you to Ronnie. We decided to go to the Asian Market. Yes, I've been reading this topic with relish. No, it didn't strike me until we pulled into the parking lot that it was the day before Chinese NYE! OH the store was more packed than I've ever seen. Both with goods to sell and people. I wish it hadn't been so packed because I could have spent hours in there and I would have taken pictures. The seafood and meat sections had so many items--tons of fish and whole chickens. All over the store there were banners and lanterns. Predominately red and gold colored. The aisles were so packed with excess things that you could barely get your cart through. The line to check out was enormously long. I wish you would have been with us--I really enjoyed seeing what everyone else was buying. We definitely stuck out like a sore thumb being the only non-Asian people in there lol. I know now that one lady was buying pomelos after reading your post. They were wrapped in protective netting and tissue paper. She had several of them. Another person seemed to have tons of the ingredients to make a huge hot pot. I imagine the family that runs that store were completely exhausted by the end of business hours last night. I also learned that I was born in the year of the Tiger and Ronnie was born in the year of the Snake. Which is ironic because he's deathly afraid of snakes lol.
