  1. Update: I was able to order some DeBuyer carbon steel pans from Coquitlam Food Equipment. I've had them a few weeks now. These pans are outstanding. Unwarpable, great heat distribution. Incredibly heavy though, not for the weak wristed. Relatively inexpensive too.
  2. Hey, Does anyone know if you can get these pans anywhere in Vancouver? I'm on a mission.

    Had a few friends over for dinner. We had a semi-vegetarian amongst us so we kept the main course sans meat. Here's what we made. Tuna 2 ways, baby brioche. Potato cake, wild mushrooms, asparagus, mushroom velouté, Piave cheese. Passion fruit/raspberry gelée with raspberry financiers. Le Chef!

    I love gooseberries-a fruit that isn't used enough. Can you give details on the recipe? ← David The gooseberry sauce was pretty basic. I simply reduced some shallots and red wine along with a few fennel seeds, added brown chicken stock and reduced further, stirred in a couple of tablespoons of green gooseberry preserve that contained whole gooseberries. I would've liked to use fresh gooseberries but couldn't find any. I added a few drops of white balsamic vinegar to cut the sweetness from the preserve , strained it and finished with a little butter, of course.

    Fish cake with pickled onion and carrot, thai red-curry sauce. Duck breast, celeriac purée, gai-lan, gooseberry sauce. baby pancakes, caramel bananas, vanilla mascarpone cream.

  12. I ordered some items from them in may. I STILL haven't got anything. Sent about 5 polite e-mails and 1 profanity laced tirade. This was the reply to my tirade: " I apologize for the delay in responding - to answer your first question - yes these e-mails get read, but not until today. We've been rebuilding the WillPowder site and upgrading our ordering system and our e-mail has been down. We've been doing all we could to make sure all orders are received and I apologize if yours was missed. Your order was shipping by airmail to your Canada address over a week ago and the only possibility - an occasional one - is that it is held up through customs. We do all we can to clearly identify what we're shipping on the manifest but packages do sometimes get caught up in the customs process. I'll do everything I can to learn the status of yours and reply ASAP Best, Adam Rucinsky" that e-mail was sent on July 9th and I haven't heard from them since. At this point I'm assuming I wont be getting anything. Hopefully they enjoy my money.

    dockhl~ Thanks for the kind words! All of my grand-total of 4 posts have been in this thread. As for the tomato vinaigrette, pretty simple. I cooked some pancetta, reserved the drippings. Reduced some sherry vinegar in the same pan with a little honey maybe a splash of white wine too (i forget), then just whisked in the drippings and a little olive oil, s&p and stirred in some diced tomatoes at the end to warm through and break down a little. voilà !
