  1. If you are near Pecos, just a few minutes from Santa Fe, you must try Pecos Cafe and Grill. Doesn't look like much from outside, but once inside, you will be transformed. The building has a long, rich history. Excellent old-world European style cuisine.
  2. bean and egg or potato and egg tacos on homemade four tortillas, a hotter than hell salsa, (thanks Olga!) and Mexican coffee fixes me up every time
  3. I like Maggi's solution. Lately when I think about using ketchup, I use Sriracha. It's spicy and totally fabulous!
  4. I usually cook about 5 or 6 fairly involved evening meals a week and about 5 not-so-involved noon meals a week. Friday night is our "cookout" night. I love to cook and my partner loves to clean up.

    Dinner! 2002

    The Roma tomatoes were so excellent at the market. So last night I couldn't resist making Fideo.
  6. The most difficult part of eating a non-tender meal onboard is trying to cut it with a plastic knife (post 9/11). I fly Mexicana First Class and in my Tequila haze, remember some decent food.

    Fresh herbs

    Whenever I have "too much" thyme, I usually slow roast thick tomato slices sprinkled with olive oil, a pinch of sugar and salt, and mound of fresh thyme on top. These are great in sandwiches, in salads or by themselves.
