    Highly recommend you look up "The Pastry Queen" cookbook by Rebecca Rather. I too am a native Texan (like Rebecca) and grew up loving Kolaches. Pronounced "ko-LA-chee". They can be sweet with fruit filling or cheese or savory, filled (my favorite) with a nice sausage. They DO NOT look like the blueberry filled buns in previous post. There is a nice photograph in "The Pastry Queen". I would imagine they could be successfully frozen after baking. And with some experimentation, I bet you can figure out how to freeze the dough and take it out to rise in the morning. The real thing is lovely, filling but not leaden. I could not determine where you are located, but they are definitely worth having in your coffeehouse. Even if you have to educate your customers to their beauty!! Good luck!   2. Sorry to be a cynic. I loved the book, "Kitchen Confidential", but I lost faith in Bourdain when he went "commercial" with all the TV shows and celebrity showings. I think he is old news and it is time to move on. Baffles me why he still has so many loyal fans!
  3. No way is it overkill. It can wreck your career if you don't know how to behave at dinner. I haven't seen mention of my number one rule - maybe it is just so obvious! No chewing with the mouth open. And although it doesn't usually come up at the dinner table, no gum popping! I grew up in the south and as my Mom taught me, "Cows chew their cuds, not you!" Anyway, you can "pick your battles", but the table manners are certainly worth insisting they get right. My gorgeous daughter goes off to college next year and it is nice to know she can handle herself beautifully "at table". There are plenty of other things to worry about after all.
  4. I was going to say The Zuni Cafe; too bad its closed on Monday. We also really like Rose Pistola for seafood. Just stay away from "Fisherman's Wharf" - scads of people, too too touristy. Have your other meal at the Ferry Building - the inside stalls are "to die for". Pick up (several) jars of "Lavender Salt" from Eatwell Farm if they are open. And some olive oil from McEvoy! Enjoy! PS - If you have any spare time, we are always looking for chaperones for our one and only at USF (we are in Boston).
  5. Why complicate matters. Just organize yourself with some good wine and order "Chinese". Sit back and enjoy! You don't want to be in the kitchen stirring the risotto when the streaker goes by.....
  6. Don't bash Emeril. He is popular, but terrific. I have learned a lot from him. Just back off of the fat content, that's all. We all need a splurge now and then.
  7. Definitely, go to Zuni Cafe and order the roast chicken. It sounds trite, but it is oh so good. I make it at home now. We spent our Honeymoon in San Franciscao and went to many wonderful spots. The 2 that stand out are Zuni (can recreate sort of) and Chez Panisse (cannot). Enjoy. I recommend Rose Pistola as well. Touristy, but still quite wonderful.
  8. The only time I won't share is when someone will be disingenuous in the usage. Like my friend _________, who will substitute Pillsbury refrigerated dough for the lovingly made puff pastry. Then, I refuse to give it because I don't want the wonderful recipe I cherish that bastardized. Otherwise, I will give it. Also, if they use the Pillsbury stuff, I don't want to be responsible for the lousy outcome.
  9. Well - I did as I planned and ordered a Spring boost from Diamond Organics. Ordered Tuesday night (NE time) and it arrived today (Thursday). It is absolutely spectacular: The seasonal sampler (veges & fruit) - beautiful greens (2 I am working to identify, along with mesclun, a red leaf lettuce, parsley, and some baby spinach), some tender carrots, broccoli, and baby potatoes. Two kiwi, 4 apples, 3 pears, 2 clementines and 3 assorted oranges, etc, etc. The "Cafe Bouquet" - breathtaking. Includes wonderful assortment, including fragrant stems of Rosemary, orange dahlia like flowers, etc..... and one fabulous calla lily for drama. The extras - fresh basil, 2 pounds of blood oranges, 2 pounds of anjou pears and a wonderful artisan bread loaf. No take-out this Friday night!!!!

  12. Well, if you go to Rabbit Ridge near Healdsburg (sp?) and ask "How much is the tasting?", they will say something swell like "This ain't Napa lady!" and will give you a swell time. Also, you can hope to get "Chris" on the tram tour at Benzinger (which is, unfortunately, in Napa, but wonderful nevertheless). Also, don't miss Artessa right on the line, a gorgeous destination/art museum type of place with wine that are incredible. And just to make it perfect, be sure you stay a long weekend at Madrona Manor in Healdsberg and enjoy the jazz on the porch! Okay - so this was on my honeymoon, but I'd do it all over again!!!!

  14. I agree with Picaman - needs to be small size soda. I don't know why a diet coke wouldn't work, other than the sheer contradiction of lo-cal and peanuts. Also agree with Mudpuppie, who says needs to be Tom's or Lanz. However, you don't have to buy them from a vending machine. Preferably, you buy them from the corner grocery (where Dewey or Hazel would write down you purchase in a little book of receipts and hopefully your parents would pay it later that month) on your way walking home from school (1 1/2 miles in the snow.....). Sorry, sorry, getting carried away with nostalgia. This was in Texas so didn't get that much snow. But, sad to admit, to this day I crave the contrast of the sweet coke with the salty peanuts (admit it, there is a lot of that in the best food today) and the texture of crunching the peanuts as you sip the cokes. Peanut butter is a whole 'nother subject. Best eaten crunchy on saltines. Or take a jar into your office and have it for breakfast with graham crackers!
