  3. It is far more customary to order bottle water in Europe than in the U.S. I would say the trends are reversing themselves. Far more people order bottled water in NY today than did 20 years ago and the reverse is true in France.Very small question. In the 1960s and 70s when I was in France (mainly Normandy) for months at a time, no one I knew drank tap water. I was told the calcium levels were too high. Water was boiled before using it to make a stock, coffee, whatever. I remember the tap water tasting like liking a metal pipe. Has the quality of the water improved?
  4. There is a range of olive oil chips in Canada sold by the Loblaw's grocery store chain under their house brand, "President's Choice". Roasted garlic and onion. Black pepper. Rosemary. About another five kinds. They're thick cut, quite crisp. I don't much go in for packaged crisps, but these are better than most.
  5. Stevie P, dear, no one has denied it except jokingly. There is however some objection to denigrating and exaggerating all of the culinary traditions and British product across the board. Again, as I have pointed out, I see agreement with your basic premise.
  6. cabrales, therre can be "good" trolls and "bad" trolls, depending upon their intentions and the effect their behaivour has upon others. They "troll" discussion groups, looking for people who will rise to their "bait" and engage in "flaming", which is rude and pointless argumentation. As I am not a moderator or admin on this board, I'll say nothing further on this topic and leave it all up to them.

  9. I thought it was quite clear that tutti-frutti was Mr. P's troll. That's why on Page 6, I called it "tutti-frutti" and then later: "Steve P, um, I mean, 'tutti-frutti'." The fundamental rule for dealing with trolls who are flame-baiting is: Ignore the troll.
  10. Jason, no. I was a vegetarian for many years but some allergies and age have made it neccesary to eat meat. I cook vegetarian meals and know a great deal about various vegetarian cuisines and maintaining a good protein/carbohydrate balance for each meal. The real "virtue" of vegetarian food is that almost anyone can eat it, so no arguments. And it can (and should, but often doesn't) help one to learn how to draw with a large palette of flavours. But I must say that over the past years, working with bones and flesh and silverskin and fat has given me a much deeper, more "organic" understanding of even celery.

  12. What's all this then, eh? :wow: Canadian back bacon (usually known as "pea meal bacon" because it is dusted with, that's right, pea meal) is gorgeous stuff. As is any kind of bacon that isn't that grocery store pre-sliced stuff in the slimy plastic. It should be about 1/2 an inch thick, grilled until lightly blackened but still tender. Now do an eggs benedict, chop coarsely and mix with roasted garlic mashed potatoes, or make a sandwich with some ripe roma tomatoes and tallegio. Or open faced on a piece of buttered baguette with a swipe of Dijon or even Keene's. Or with scalloped potatoes or...

    What I like about Thai foods are the combination of very cooked down and extremely fresh ingredients. So I would think that takeout for stockpiling should involve the highest ratio of glop because they'll rot less. Sticky rice can keep fairly well and is great cold.
