Why do my cookies turn out flat???  Followed your recipie, Dorie, for chocalate chips.  But I always have this problem.  My cookies melt out, rather than puff up.  I can tell you step by step what I've done, but thought you might have ideas before I went thru that.  They're still tasy as heck, but thin, not mounded like yours. :wacko:

    Do you start with a new (not hot) cookie sheet for each batch of cookies going into the oven? If not, the cookies will melt out before cooking. That has just been my experience.

  2. Any cookbooks from chefs in Montreal/Quebec/Eastern Canada that you use to cook at home?

    Oh how I love a good cookbook. My friends think it's crazy that I read them like a novel. Some of my favorites right now are:

    The New Joy of Cooking - I am rediscovering this book. It is such a great source for tips and tricks.

    Kitchen Sense - I love good, stick to your ribs, comfort food. This book has a great twist on things like Mac n' cheese, chicken divan and cauliflower gratin.

    Daily Soup Cookbook - nothing beats a delicious bowl of warm soup on a cold fall evening.

    Also, I love anything from cooks illustrated. I love reading how they came to the perfect recipe. I just made their Chicken Francese (served w/roasted asparagus and parmesan risotto)...soooo good. Their technique for breading the chicken is the best because it remains crispy while cooking in a little bit if sauce.

    This only touches the tip of the ice burg. I collect cookbooks and I am always discovering new jewels. Recently I purchased The Good Home Cookbook and Easy Entertaining. I’ll keep you posted on how these work out.

  3. Sometimes it's not easy to get results when you do a search on this site. So please be nice when someone has posted and just give the links....I have had some terrible times with the search here, and it does need a bit of tweeking. Be Nice.....

    Thanks highchef! It is hard to do a search and find exactly what you are looking for. I am new to eGullet and I didn't see the topic. I did realize that it had probably already been covered but I thought it would be fun to put it out there anyways. Thanks everyone for your responses. They all sound like great books, many of which I am sure I'll be adding to my collection.

  4. What’s your favorite cookbook? You know the one that has been dog-eared, book marked, written in, and stained over time. As a person who is still learning a lot of the basics I have to say that I am constantly turning to “The All New Joy of Cooking” for basic information and tips and tricks. But my new favorites are “The Daily Soup Cookbook” by Leslie Kaul (I love making soup) and the new “Kitchen Sense” (Try the Ultimate Mac n’ Cheese recipe- it’s the best) by Mitchell Davis. I would love to know what you turn to so that I can maybe add that book to my collection.

  5. The short answer is 40 years. The long is that my mother had 2 cookbooks and my grandmother none and I had never really looked at one until I left home. My then boyfriend (now husband of 39+ years) was sent off by his mother with the paperback James Beard Cookbook. I still have it. Thousands more have joined it in various ways. We lived for a couple years right across the street from The Strand and I worked at Powell's in Portland. Fabulous discounts. Now, of course, I work for Kim Rickett's Book Events doing the Cooks and Books Visiting Chef Series which is incredibly fun and I end up with signed copies of books by the best of the best. Cookbook authors are nice people. I will wait until November for my copy of Dorie Greenspan's latest when we hold her event at Seattle's much-loved Macrina Bakery. The obsession has never let up and my kids have caught it a bit.

  6. I just found a perfect copy of this book in a used bookstore a few weeks ago- perfect timing. I am happy I stumbled upon this resurrected thread. I am looking forward to baking from this book and sharing my success and mess stories with you. I am so envious of you bread bakers. I SO want to learn to bake bread, but I am just not sure how to get started. Maybe this book will get me there.

  7. In my experience, Joe, there are only two places you really need to try:

    Noodle Boat in Issaquah

    May in Wallingford

    Noodle Boat is more like a hole-in-the-wall curry and rice shop and May more like an upscale Bangkok restaurant.

    I second the recommendation for May in Wallingford. They have delicious authentic green tea, served in beautiful teapots. My favorite dish was their Pad See You.

    I would also suggest, my personal favorite, Jamuree, in Capitol Hill. They have amazing food.

  8. Hi Everyone!

    I just discovered eGullet yesterday! When I opened this up and saw that there are a ton of cooking and baking obsessed people like me...well, I can't explain how happy I was! I just purchased the book at Costco, and spent the entire night tabbing the recipes I want to make. I am so sad that I won't be able to bake anything until next Tuesday (friend in town...doing the tourist stuff). I look forward to joining in on the conversations, successes and messes.   9. I was looking for a decent French Dip in Wallingford (the one had the Rusty Pelican is horrid) and I noticed that Murphy's Pub has one.  Before spending any money I thought I'd ask if anyone has been to Murphy's to eat.

    I used to love eating at Murphy's Pub; however, since the owner changed, the food as not been up to par. I used to love their Philly Cheese Steak sandwich and the French Dip. It has been several months since I have been back so maybe they have gotten better at the bar food fare. It's worth giving it one shot.
