  1. I like it. I would have liked more food pictures, however.

If you click on the either three of the "five course" "ten course" or "GTM" buttons under the cuisine heading over and over again, it rotates the pictures. Impressive photography, btw.

And noambenami, speaking as a user, I had no problem navigating the site and I found it pretty much representitive of what I exerienced at Moto. Almost futuristic in presentation. Then again, I am no expert. I don't think many people who go to restaurant websites are though.

I noticed that about clicking on the buttons. There are also four short tv clips on the site, I enjoyed them all. I'm wondering if we might be able to see highlights on the site of Chef Cantu on Iron Chef America once it airs.

  2. Thanks for the reply to my question! You seem very open to trying unconventional and conventional thinks to make the dining experience enjoyable for all tastes. A

big reason why I just made a reservation for Moto in June.

congrats! can't wait to hear your report!

As I stated in another thread, I look at pics of your food and think "That really looks good!"

    and so it is!

    enjoy!

    u.e.

Will do...hopefully I can get a few nice pics, maybe one of the laser?

  3. We will not offer a wine list per say, just wine progressions. Every tasting menu will have a new world and old world pairing offered with it. We feel the best way (and the only way) to experience moto is to allow us to set the parameters for wine and food pairing. A wine list would be futile when exploring this type of gastronomy, so we have decided to minimalize it altogether. It just makes sense from a financial and creative standpoint.

As far as the future of moto..................

as long as every new team member is totally commited to forgetting their past experiences and retaining only a high level of attention to detail, moto will carry forth in an acceptable fashion. Idiscourage all of the cooks from reading cook books and only focusing on knowledge of ingredients. Techniques are things we can invent and reinvent.

Thank you for your kind words, it means a lot.

You can order cocktails with tasting menus at Moto, right?

I may be alone in this, but I would love to see a mixed drink/cocktail tasting as an option at a place like Moto. Not everyone is into wine, I'll drink Riesling but I don't really enjoy it like I enjoy a good Mojito. If I could taste several cocktails without getting sloppy drunk, I'll be more inclined to come back to the lounge when I just want a couple drinks, and I'll be more inclined to do a tasting menu again.

We have created some very different "mixed drinks" that we can pair with foodstuffs. Are they cocktails...perhaps to some extent. However they are far from the norm. The wine progression list is also being expanded with 2 new categories. "Synthetic Pairings" or "reformulated vintages" and "Laserization Creations". The whole wine/synthetic/laserization/mixed drink option I feel is still the best way to experience Moto, so we are beginning to apply ourselves to the category in the same way we approach the food. Matt Gundlach and I believe that a glass of wine or a "mixed drink" should not be limited to the historical standards of the experience. So you are not alone in your quest for a nice mixed beverage experience. There is no reson that we cant customize something that can be intellectually stimulating as well as something that goes against the grain. This option will definitely evolve in the coming weeks. Just as it has evolved since the last post above.

Thanks for the reply to my question! You seem very open to blending unconventional and conventional things to make the dining experience enjoyable for all tastes. A

big reason why I changed my mind about where to go as I just made a reservation for Moto in June. I think I'm going to enjoy it and better yet want to come back frequently, and I think my dad will enjoy it as well. I like what you've done with the lounge-sometimes I might just want drinks and dessert, sometimes the five course menu, sometimes the longer ones for a special occasion, like the dinner I'm treating my dad to. You definitely present more options than other places of your caliber, imho. As I stated in another thread, I look at pics of your food and think "That really looks good!"

Is it possible to have a New York Yankees logo imprinted on one of your edible menus? I'll contact the restaurant as the date gets closer, I'm just curious if that's something you would do.

  4. I just received news from Chef about a special program which Alinea will be running to celebrate their 1st birthday.  During the week of May 3-7, a special retrospective menu, featuring 17 (or so) of the first year's best dishes, will be offered.  Pricing will be $175, the same price as the Tour de Force.

What a great idea! A culinary "Best of's!!" :raz: A edible reprise!!

    u.e.

Shouldn't the entire regular menu be "best of's? Especially at that price!

  5. not to make the decision any harder, but have you thought about going to TRU?

I had never really done a multi course tasting menu until eating at TRU last march and I have since fallen in love with doing such menus.  The grand tasting menu had numerous things that were all excellent with many familiar, but still quite different touches.  Just a though.

I also loved Alinea just as much, although it is extremely different.  I think I appreciated Alinea much more having been to TRU first and experience cuisine and service at that level one time before.

I am considering Tru, I have heard so many good things about it. I am trying to consider my dad in all this, he's adventurous but I've never known him to go to a seriously eclectic place. But then, it may be like the kind of gift that you love, and appreciate cause you wouldn't have thought to get it for yourself.

How was the food at Tru? Which menu did you do?

  6. The food at Alinea tastes better. The food at moto is wackier, fwiw, some of it is quite good. Like some other people on this board, I consider Alinea to be the finest restaurant in the country, it plays in a different league than Moto.

However, if you've never done a tasting menu before, Alinea's food may be a bit difficult to understand...no offense meant, its just very intellectual, complex food, and I believe you would get more out of the experience once you have experienced less rarefied tasting menus. Go to Spring, or Le Francaise or Zealous, or any of the other wonderful Chicago restaurants and have tasting menus.

Going to Alinea without ever having done a tasting menu is like going the the museum of modern art with no previous knowledge of art and art history. You'll still have a good time, but you'll be missing a whole lot.

    Just my opinion.

I've been to many of the best restaurants in Vegas, and Michael Mina's Aqua in SF before he left and his new place in SF, some very 'adventurous' places, so I'm hardly new to great restaurants but I've never done a 'grand tour.' I'm sure I'll go to both Moto and Alinea in due time as I live about four hours away, I appreciate the help in deciding.

Does Alinea play music? Do they serve wine by the glass? Cocktails?

  8. to answer elrushbo's question from the closed discussion on alinea:

both of my "tour" dinners took around 6 hours.

    u.e.

The current running average is 4 hours 23 mintues...some have finished in 3 hours...it solely depends on how fast you eat, if you or a member of your party gets up alot during the meal, which wine program you choose, and if you are taking photos.

I am very new here, I will get used to the format soon, if this question is better placed in another forum, then sorry...that said, your response to my question is much appreciated. You'll time the courses based on how fast diners eat? Very interesting, your service must be awesome. That kind of attentiveness is not always seen. I'm taking my dad to Alinea in June-will we have the option of deciding between the tasting and tour menus at the restaurant? I got the impression from calling Alinea that you have to reserve a table for the tour in advance.

I'm curious as to how often you make menu changes, some places do it most every day, but I cannot imagine having as many dishes as you do and changing it all the time. You gotta have some time to yourself! Any hints as to what's going to be on the menu during June?

  9. elrushbo.

really depends on what kind of experience your looking for.  personally, i favor moto (been once) over alinea (been twice).  strictly personal preference.

    u.e.

I am looking for a 'fun' experience, I've never done a real multi course dinner and want to try that. I find Moto and Alinea appealing in that they both seem to appeal to all your senses, but I do consider taste to be the most important. I want to walk away having had an 'experience' not just a good meal. I was leaning towards Alinea, but after seeing pics here and on the websites, I look at half of the pics of Alinea food and think "What is that? where I look at pics of the food at Moto and think "That looks good!"
