  1. Well, you definitely made a good choice with Noma. About 1.th and Madeleines (the food theatre)... If you want and all night experience you should go to either of the places. At 1-th the food is very tasty and the environment is so cozy and comfy. At the theatre it's well it's like going to the theatre! Everything is in a timeframe and there's a "manuscript". Both places have just gotten SERIOUSLY GREAT reviews in two top newspapers in Denmark.
  2. What do people think about the scandinavian cuisine? Restaurant Noma (www.noma.dk) is definitely a pioneer, with the manifestum (www.nordiskkoekken) Rene Redzepi, head chef and owner, made with other star chefs (Dahlgren, Valimaki, Hellström and the likes a beginning was made. Now the machine is rolling, Dahlgren is starting up a new restaurant with the nordic cuisine as main focus and others are following the example. What is so special about this? No foie gras, up until recently there would be no truffles on the menu either, but now it is possible to get very good truffles from Gotland in Sweden. It's somewhat down to basis. Taking the ingredients and produce, looking at them for what they are now and looking back at what they were then, then taking the best of this with the best techniques of the modern kitchen and creating delicios light and clean food. It's no more molecular than knowing that a piece of fish is better off vac packed and poached since it will keep it's juices, but it is still a wise way of cooking since you have to fully understand what you are working with and why. To experience the real scandinavian cuisine, one must travel to Scandinavia (even though, not wuite popular due to all the hype about the drawings in a Danish newspaper) and discover that scandinavian cuisine is so much more than herring and pork on a piece of ryebread!
  3. Formel B is one of the top french classic restaurants in Copenhagen. The two owners and head chefs are young, mid 20s, and they both have a background in the french cuisine, if anyone know or remember when Kommandanten had two stars, they've both been working there as far as I know. The kitchen is as I said classic french gourmet food though with a bit of a twist so it's not heavy plating. On the a la carte menu you will find classics as Tournedo Rossini but I would definitely go for the tasting menu. With the micheling guides touring Copenhagen last week, rumours are that Formel B, Noma or Ourbæk could be up for their second star but nothing is for certain. There is always different rumours and no one really can tell till the guide is out in March. Though it is very exciting though. Hope you have a pleasant evening at Formel B!
