  1. i was making what i thought were vegan marshies using emes... and then i spent months trying to come up with an alternative. with the aid of a food technologist, i did. sorry, i can't give away my hard-won recipe, but i can tell you that fluffiness is the difficult part to replicate. i didn't try pectin, but i'm sure it won't create fluff. cheers alice
  2. yes, TT were using emes (which turned out not to be vegan) but the vegan marshmallows were only a small part of their range.
  3. I've had no luck with the agar. I tried a few times then got too busy to try again. I used a fish gelatin that works well - but that won't work for you. If I have any luck in the future I'll post the results. ← i'm keen to try the original recipe, using marshmallow root. does anybody know of such a recipe? i found one, but it was very vague about quantities and method...!
  4. i've been scouring this thread for info about vegan marshmallows, and although there are lots of tips, i haven't yet managed to come up with a good recipe! i have used emes gel, but now believe it is probably fish-derived rather than vegan, so no longer wish to use it. i have been using various combinations of agar agar, guar gum, xanthan gum and tapioca starch, and nothing has achieved any fluff or height! any suggestions would be most appreciated.
