  3. check out www.bespokecuisine.com. i did some work with them a few years back and very often they have cooks moonlighting with them that are working at some of the best restaurants in the city.
  4. nice, i got back from italy a few weeks ago, i was at the slowfood/terra madre convention. next to that was the salone de gusto, a huge "gourmet" food show, featuring more cured pork products than you could possibly imagine, among countless other things: cheeses, fruits, sweets, spirits, wines, beers, etc. etc. if we ever meet in person, i will bring some of the literature that i brought back. i'm sure that you and most of the other people that are on egullet would like it...alot...

  6. i just read about chinaBAR that is opening or has opened in the p&l district. but i am excited to be returning to kc after about 13 years and am getting very interested in opening a place because everything i read about (from a distance) seems very chain(y) and dated. obviously there are exceptions, but for a city that is getting mucho press about being a new dining destination, the new places aren't what i was expecting.

Neither did I, thank goodness! u.e. ← i'm pretty sure that they still do tita's menu from laura esquivel's "like water for chocolate" every valentine's day. in fact, ms. esquivel has been there to read passages from the book. probably the coolest special-event-type-of-thing i've been a part of, i feel lucky to have seen the night from a cook and customer point-of-view. the place is electric! here was/is? the menu: passion fruit magaritas champandongo: tortillas layered with beef/pork, almonds, pecans, cream, cheese and red mole. NV proseco "rustico" nino franco, valdobbiadene, italy oxtail soup with tomatoes, green beans and smoky chile morita quail in roste petal sauce with chestnuts, anise, honey and cactus fruit 1998 traminer, pojer e sandri, trentino, italy chiles en nogada: poblanos with pork picadillo, fresh walnut sauce and pomegranate seeds 1997 saint george, skouras winery, nema, greece chabela wedding cake with apricot, meringue and prickly pear hot chocolate with cinnamon and almonds all of that for $85 per person!
  8. tonight's dinner at blue hill stone barn (03.02.06): warm fennel soup with curry marshmallow parmesan/herb crisp beet chip mini beet burger with goat cheese and olive oil foie gras/roasted squash sandwich in chocolate tuille raw hakori turnip with sea salt mixed greens (from the greenhouse salad) with hakori turnips and beets poached rainbow trout with braised fennel and citrus chatham cod with lentils bacon and eggs (pork belly, actually pork all kinds of ways, romaine, soft cooked egg) warm winter vegetable salad with chestnut puree baby beef with bok choy and sunchoke stock citrus salad with grapefruit sorbet and milk jam chocolate mousse with chocolate krispies and egg foam (served in egg shell) passion fruit ice cream with passion fruit souffle chocolate covered almonds and cocoa nibs
