  1. Um, where might that be, sim? ← I work at the Brookstreet Hotel in Ottawa. and the steak frite is on the lunch menu. pretty good meat...
  2. at my work we use Alberta AAA Angus beef, we air dry it for 3-5 days then cut the portions we need on a daily basis.
  3. Like anything in the food industry, it only takes time to develop the best ingredients and products. And Quebec Wines are farely new. Give it a few more years of test and error and we will have a great name to talk about. have any of you tryed the "Gris" from Orpailleur?, wich is a Grey wine, mix of red and white grapes, excellent!

    Becoming a chef

    Like busboy sayd : let her try some basic restauration job ; dishwasher, busgirl, bread girl (nothing complicating). I started as a dishwasher at 16, went back to school (2 degrees in Culinary) and I'm now cooking in a 4 Diamond restaurant. and I'm 19 now. It's hard work, hard dedication, I just spent 38 hours in 3 days cooking for hungry Partyers, but I love it and would probably not trade it for anything in the world. and for the cheese thing, i'm intolerent to lactose and still cook, i love cheese anyways, can't eat any of the soft cheese neither creme fraiche (basic of pastry). But i still cook with them daily... Hope all the luck to your daughter and yourself in a hard decision!
  5. i have a EggMcSimon everymorning at work. consist of : English Muffin, 2 eggs over hard, a litle bit of Mayo and some delicious canadian smoked salmon. heheheehehe

    The Ottawa Topic

    Here i go with my huge list : in Hull : St-Estephe, Le Sans-Pareil, Le tartuffe, Henry Burger, L'espresso (same owner as St-estephe), Le bacara (casino more expensive). In the outaouais a must is L'Oree du bois! i can't emphasise it more, it is the best place to eat, good price really good table d'hotes nice location in Old Chelsea. In ottawa : Eighteen, Luxe Bistro (if you can have a reservation), Vineyards (if you want ok food but wonderfull wine), UrbanPear, Perspectives restaurant (brookstreet hotel, where i curently work). there is more, but i can't think of them all...
  8. What restaurants did you go to in Montreal and Quebec? and I did read, somewhere, that you went to the Jean-Talon market, How would you compare it to other markets from around the world? thanks and your shows, books are wonderfull! keep it up!
