I usally make pie crust by hand. The most important rule for me is: use the butter that comes directly from the fridge.

My instinct would be to go for something like fish pie, where having the fish turn to mush isn't really a problem.
Otherwise, you can boil the fish, turn the filet into mush, add eggs, erbs, wet bread and everything you like in order to make fish croquette

This online resource is in french but it is available also an english translation (I don't know if it's good or not).
I think that it could be useful because there are a lot of illustrated and filmed recipes.
