Sous chef, executive chef, garde manger, chef de partie, demi-chef, ... and terms I've recently heard watching Gordon Ramsay shows (they're usually intended as insults): commis, porter, ... Executive chef is the head person, but sous chef is more vague: between the typical cooks and the executive chef?
